STEAK FOIL PACKETS (HOBO DINNER)
These Steak Foil Packets (sometimes called Hobo Dinners) are so easy you will not believe it! Fold rice, steak, and onion soup mix into some foil, bake, and voila. Deliciously tender steak and rice, ready to pair with whatever vegetables you want!

Steps:
- Preheat the oven to 350 degrees F. (Or see notes for camp fire or grill instructions.)
- Tear off 4 large sheets of heavy duty foil, about 10-12 inches across. Regular foil will work too, just be careful not to tear it. You can double wrap if you're worried about it.
- Add 1 cup of cooked rice to the center of each sheet of foil.
- Top rice with about 1-2 teaspoons of onion soup mix.
- Use a sharp knife to slice the steak into 12 thin strips, about 1 inch across. See photos.
- Place 3 strips of steak on top of each mound of rice.
- (At this point, you can add chopped vegetables around the edges of the rice. Season with salt and pepper. See notes.)
- Pour 2 tablespoons of evaporated milk over the top of each mound of steak and rice.
- Sprinkle the remaining onion soup mix evenly over the rest of the steak in each packet.
- For each sheet of foil, bring the short ends of the foil together over the rice and steak. Press together and fold down securely over the food. For each end, fold the corners in, and then continue folding until you have a nice secure packet. See photos!
- Place the 4 packets on a large baking sheet.
- Bake at 350 for 1 hour.
- Remove from the oven and carefully open each packet, being very careful not to burn yourself with the steam.
- Serve hot!

HOBO DINNERS WITH GRAVY
I know this is not the best written compared to most of the other entries, but I'm a 22 year old guy, so please forgive me. This is a great, easy to make meal that we make sometimes when we have company over, or if we are low on groceries because we almost always have this stuff around. Enjoy.

Steps:
- Marinate ground beef in a little Dale's and a few squirts of Worcestershire sauce for a couple of hours.
- Put ground beef in a skillet and brown.
- Prepare mashed potatoes in accordance with package instructions.
- Take sauce pan and add veggie oil and flour, cooking over medium-low heat to make a rouge.
- Drain the juices from the skillet with the meat into the rouge and stir constantly until gravy thickens.
- Add green beans, corn and mushrooms to beef in skillet and mix well until heated through.
- Can serve with mashed potatoes and gravy on the side or mix it all together like we do.
HOBO DINNER
This version of hobo dinner is one my mom and dad made when we were growing up. It uses smoked dinner sausage slices (Hillshire Farms, etc.) instead of ground beef or other meats. Everyone loves it. It only takes one dish to make this in, and it's an entire meal by itelf in my house. Amounts can be easily increased if more servings are needed. Keeps well in the refrigerator for 2-3 days, and is delicious reheated. Not sure if it can be frozen for later....

- Preheat over to 350 degrees.
- Line a 9x13 baking pan with aluminum foil, if desired (makes for easier cleanup).
- Layer the potatoes and carrots together in the bottom of the pan.
- Layer the sausage slices on top of the vegetables.
- Layer onion slices on top of the meat slices.
- Mix cream of mushroom soup and cream of celery soup together, or pour together over casserole.
- Add water or milk to the soup for thinner gravy, if desired.
- Pour over other ingredients.
- Cover with aluminum foil.
- Bake at 350 degrees until vegetables are tender, about 1 hour 30 minutes.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a sheet pan with aluminum foil.
- Shape the ground beef into patties and place in pan. Layer the vegetables on top of the beef patties, starting with the potatoes, then carrots and finally onions. Season with salt, pepper and garlic salt to taste.
- Cover with aluminum foil and seal edges. Bake in the preheated oven until beef is no longer pink and vegetables are tender, about 1 hour.
