These muffins are a great low-fat moist muffin. I used 1/2 cup brown sugar instead of the 2/3 cup called for and I felt they were sweet enough. I also added chopped apples.

1 1/2 cups wheat bran (I used oat bran)
1 cup nonfat milk
1/2 cup unsweetened applesauce
1 egg
2/3 cup brown sugar (I used 1/2 cup)
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup blueberries (I added a chopped apple.)

Steps:

  • Preheat oven to 375 degrees.
  • Grease muffin cups or use paper muffin liners.
  • Mix together wheat bran and milk, and let stand for 10 minutes. (I didn't do this and muffins turned out fine.).
  • In a large bowl, mix together applesauce, egg, brown sugar, and vanilla.
  • Beat in bran mixture.
  • Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.
  • Stir into bran mixture until just blended. Fold in blueberries.
  • Scoop into muffin cups.
  • Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.

1 1/2 cups whole wheat flour
1 1/2 cups unprocessed millers natural bran
2 teaspoons baking soda
1 tablespoon cinnamon
1 teaspoon nutmeg
1/2 cup golden raisin
3 egg whites
1/2 cup buttermilk
1/2 cup water
1 small ripe banana, mashed (1/2 cup)
1 teaspoon vanilla extract
1/2 teaspoon banana extract

Steps:

  • Preheat oven to 400 degrees. Spray muffin tins with Pam and set aside.
  • Mix all dry ingredients, including raisins, in a large bowl.
  • Blend egg whites, buttermilk, water, mashed banana and extracts in a medium bowl.
  • Add wet ingredients to dry and stir until thoroughly combined. Fill each muffin tin 1/2 full.
  • Bake 15 minutes. Let cool on a wire rack. Freeze leftovers and defrost as needed.

1/2 cup whole wheat flour, plus
2 tablespoons whole wheat flour
1/2 cup wheat bran (QUAKER)
2 tablespoons ground flax seeds
2 teaspoons baking powder
2 teaspoons cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups bran buds (Kellogg's All Bran cereal preferred)
1 1/4 cups boiling water
1/4 cup brown sugar
1/4 cup Splenda sugar substitute
3/4 cup skim milk
1/4 cup mashed banana (about 1 small)
1 egg
1/2 cup walnuts

Steps:

  • Preheat oven to 400F and lightly spray muffin pans with cooking spray or line with cupcake papers.
  • Stir together first 7 ingredients, and Splenda; set aside.
  • In large bowl, stir together cereal, water and let stand 5 minutes or until water is absorbed.
  • Mix sugar into softened cereal until well combined.
  • Stir in milk and mashed banana.
  • Add egg than gradually stir in flour, until combined.
  • Stir in nuts.
  • Portion into 12 muffin cups.
  • Bake for 20 minutes or until tops are golden brown and spring back when lightly touched.

1/4 cup vegetable oil
3/4 cup buttermilk
1/4 cup orange juice
2 tablespoons dark molasses
2 tablespoons honey
1 tablespoon orange zest, grated
1 large egg
3/4 cup all-purpose flour
1/2 cup whole wheat flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup dates, chopped
3/4 cup walnuts, chopped

Steps:

  • Heat oven to 400 degrees. Grease one 12-cup muffin tin.
  • In a large bowl, combine bran cereal, water and oil, stirring until bran softens.
  • In a small bowl, whisk buttermilk, Orange Juice, molasses, honey, orange zest, and egg until blended.
  • In a small bowl, combine flours, baking soda and salt. Add buttermilk mixture to bran, stirring to combine. Add flour mixture, dates and walnuts to bran mixture, stirring just until flour is moistened.

1/2 cup rolled oats
1 cup Splenda granular
1/2 cup non-fat powdered milk

Steps:

  • Preheat oven to 400 degrees.
  • Stir together flour, splenda, powdered milk, baking powder, baking soda, cinnamon, nutmeg, and salt in a small bowl. Set aside.
  • In a large mixing bowl, combine bran cereal, oatmeal and skim milk. Cover bran and oatmeal with as much of the liquid as possible and let stand for about 5 minutes, or until most of the liquid is absorbed.
  • Once bran is softened, add egg, oil, fruit and/or nut mixture, beat well. (You don't need an electric mixer, wooden spoon works fine) Add the flour mixture, stirring "only" until combined. DO NOT OVER MIX! Batter will be lumpy. Put even amounts of batter into 12 muffin tins that you coated with non-fat cooking spray.

Steps:

  • In a large mixing bowl, stir together flour, oat bran, brown sugar, baking powder, cinnamon, baking soda, and allspice.
  • In a medium mixing bowl combine mashed bananas, milk, egg substitute, cooking oil and vanilla.

We really enjoyed these, and I think if I don't write it down I'll forget all the substitutions I made! This makes 2 dozen regular or a lot of mini! (I made 1 dozen regular and 2 dozen mini.)

3 cups wheat bran
1 cup boiling water
1/2 cup brown sugar
1/2 cup Splenda sugar substitute
1/4 cup olive oil
1/4 cup unsweetened applesauce
2 1/2 cups whole wheat pastry flour
2 teaspoons baking soda
1 teaspoon salt
2 eggs
2 cups skim milk
1 tablespoon white vinegar

Steps:

  • Put 1 cup of the wheat bran in a bowl with the 1 cup of boiling water.
  • Stir and let it sit until the water is absorbed.
  • In a large bowl put the flour, the baking soda, and salt.
  • Combine the sugar, splenda, oil, and applesauce.
  • Add the sugar mixture to the flour along with the wet bran and the remaining 2 cups of bran and the 2 eggs (that you have beaten).
  • Combine the milk and the vinegar (let sit for about a minute) and then add this to the flour mixture.
  • Mix until totally combined.
  • Put into muffin pans you have sprayed with cooking spray.
  • Cook for about 15 minutes or until done.

2 cups of All-Bran®
1 1/8 cup of non-fat milk (or I use soy milk)
2 eggs
1/4 cup of vegetable oil
1 1/4 cup flour (I use Montana white or my own whole wheat flour)
2 tbsp baking powder
1/4 tsp salt
1 tsp cinnamon1/4 tsp ginger
1/4 tsp cloves
1/4 tsp nutmeg
1 cup of raisins, nuts or both
Set oven to 400 degrees.

Steps:

  • Soak 2 cups of all-bran in non-fat milk (or soy milk). Then beat in eggs and add vegetable oil. Mix together flour, baking powder, salt, cinnamon, ginger, cloves and nutmeg. Use a bit of flour on the raisins, nuts or both and stir to easily distribute in a separate bowl. Now stir the flour mixture into the soaking bran and then the raisin and/or nuts. Don't over-stir or muffins come out tough. Drop into muffin pans - make 12 muffins. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy! I put in plastic sacks and keep refrigerated. If I want to keep them longer I freeze them and warm in my toaster oven for breakfast.
