- Preheat oven to 350 degrees. Arrange bread cubes in a single layer on a rimmed baking sheet and toast, tossing once, until golden brown, about 10 minutes.
- In a large pot of salted boiling water, cook green beans until crisp-tender, 4 to 6 minutes. Drain; return beans to pot.
- In a small saucepan, mix together shallot, mustard, and vinegar, then whisk in oil in a slow, steady stream. Heat mixture over low, whisking constantly, just until warm.
- Toss beans with vinaigrette, toasted bread, and chopped dill. Season with 1/4 teaspoon salt. Transfer to a platter, garnish with dill sprigs, and serve.

SEARED STEAK AND GREEN BEANS WITH HERBED BUTTER
Steps:
- For the herbed butter: Add the butter, chives, oregano, parsley, lemon zest, garlic and some salt and pepper to a bowl and mix together well.
- Put the butter in the center of a piece of plastic wrap and, using the plastic wrap, form it into a sausage shape. Seal it and pop it in the fridge for 1 hour.
- For the steak: Allow the steak to rest at room temperature for about 15 minutes. Fill a saucepan with some water, add a generous pinch of salt and bring to a boil. This is for cooking the string beans so it's all ready at the same time.
- Season both sides of the steak well with the chopped rosemary and some salt and pepper.
- Heat a cast-iron skillet over high heat until smoking. Add the oil and allow it to heat up for 1 more minute. Add the steak to the hot skillet and cook about 4 minutes per side for medium-rare. Remove to a plate, cover with a piece of aluminum foil and allow it to rest for 5 minutes.
- For the green beans: Meanwhile, add the green beans to the salted boiling water and cook until bright green and crisp-tender, 3 to 5 minutes. Drain well.
- When ready to serve, toss the green beans with about 2 tablespoons of the herbed butter. Slice the steak and top with a piece of the herbed butter.

I found this recipe while surfing the web. It called for fresh; however, it being late in the season, fresh were not available so I used frozen.

- Place the scrubbed and quartered potatoes in a saucepan along with the garlic cloves; cover with cold water.
- Bring to a boil over medium-high heat.
- When the potatoes come to a boil, reduce the heat and simmer until tender, about 15 minutes; drain immediately.
- Place the frozen beans in a 2-quart microwave safe dish, cover and microwave for 2 to 3 minutes.
- Stir the beans and microwave an addiitonal 1 to 2 minutes or until crisp tender.
- Return potatoes and garlic to saucepan, drizzle with olive oil and chicken broth.

- 1. Add potatoes to a saucepan; fill with water. Bring to boil; reduce heat to medium. Cover & cook until tender, approximately 12-15 minutes. Remove from heat; drain & let cool. 2. - 1. Preheat oven to 425°F. 2. Fill a medium saucepan halfway with water and bring to a boil. about 7 cups water 3. Wash green beans and trim ends. Transfer to a sheet pan. Drizzle with oil and season with salt and pepper; toss to coat. ½ lb green beans ½ tbsp extra virgin olive oil ¼ tsp salt ⅛ tsp black pepper 4. Spread out evenly and place in the oven. Tossing once halfway through, roast until tender-crisp, 10-15 minutes. 5. Wash and remove leaves from cauliflower; cut into bite-sized florets. 1 medium head cauliflower 6. Once water in saucepan is boiling, add cauliflower. Reduce heat to medium, cover, and cook until very tender, 12-15 minutes. 7. Heat a skillet over medium heat. 8. - Preheat the oven to 400F, rack in the middle. Line a large rimmed baking sheet with foil ensuring the foil goes up and over the sides.
- Add the green beans to the pan.
- Cut the potatoes into 1/2" cubes and place on the sheet pan spreading the beans and potatoes in a single layer. Drizzle the veggies with olive oil. Sprinkle on the salt, garlic powder and smoked paprika.
- Roast for 25 minutes. While the veggies are roasting, slice the kielbasa on an angle 1/2" thick.
- Remove from the oven, turn the veggies (If the potatoes start to stick, leave them be). Add the kielbasa on top. Return to the oven and bake for 25 minutes.
- Remove from the oven, flip over the kielbasa and bake for 5 more minutes.
- Remove from the oven, taste for seasoning and enjoy!
- Store any leftovers in an airtight container in the fridge.
