Leg of Lamb Marinade image

Number Of Ingredients 7

1/2 cup white wine vinegar (can use red instead)
1/2 cup olive oil
2 tablespoons fresh thyme
2 tablespoons fresh rosemary
3 tablespoons fresh mint, or 1 T dried
2 cloves garlic, large
1 teaspoon freshly ground black pepper

Steps:

  • Using a food processor, blend together the marinade ingredients.
  • Place the leg of lamb in a large container, stab it randomly.
  • Pour the marinade over the lamb, turn it to get it on all sides and in the slits.
  • Cover and refrigerate for at least 24 hour, turning occasionally so the meat thoroughly absorbs the marinade flavors.
