Peanut Streusel Pie image

1/3 cup peanut butter
3/4 cup powdered sugar, sifted
1 (9-inch) pie crust, baked
1/3 cup all-purpose flour
1 cup sugar, divided
1/8 tsp salt
2 cups milk
3 eggs, separated, beaten
2 Tbsp butter
2 Tbsp vanilla
1/4 tsp cream-of-tartar
1 Tbsp cornstarch

Steps:

  • In a bowl, combine peanut butter & powdered sugar. Place 3/4 of the mixture in pie crust.
  • In a saucepan, combine flour, 1/2 cup sugar, salt, milk, egg yolks, butter and vanilla. Stir on med heat until thickened; set aside to cool.
  • In a mixing bowl, combine egg whites, cream-of-tartar, cornstarch & remaining sugar; beat until shiny.
  • Pour cooled flour mixture into pie crust. Top with egg white mixture; sprinkle with remaining peanut butter mixture. Brown in broiler & WATCH CAREFULLY.
