A cream cheese based dip flavoured with a mix of fresh herbs. We have enjoyed this spread on rounds of sliced cucumber and also in pastry cases topped with smoked salmon. The mix of herbs and amounts can be varied to taste and availability.

- Blend or process all ingredients until smooth.
- Store covered in refrigerator for at least 2 hours or preferably overnight before using to allow flavours to develop.

- Place garlic in a small saucepan and cover with water. Bring to a boil. Reduce heat; simmer for 20 minutes or until softened. Drain and rinse in cold water; peel garlic. I've never made this recipe although have intended to many times. It is taken directly from Scandinavian Holiday Recipes. It doesn't specify whether to use fresh or dried tarragon but due to the amount I presume it would be dried.

We have all eaten herbed cheese, but most of it is store-bought and contains who-knows-what. This is a traditional herb cheese with almost nothing in it; you can also make it with fresh goat cheese or with Yogurt Cheese (preceding recipe). Serve with crackers, lightly toasted pita, and/or raw vegetable sticks.

- Combine all the ingredients in a food processor and blend until smooth. (Alternatively, mince the garlic and mash all the ingredients with a potato masher or fork until fairly smooth, then beat for a few moments with a wire whisk.) Taste and adjust the seasoning as necessary.
- Scrape into a bowl and refrigerate until stiffened slightly. Serve cold.
