125 g cream cheese
1 tablespoon sour cream
1 tablespoon fresh basil, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon fresh oregano, chopped
1/4 teaspoon fresh rosemary, chopped
2 green shallots, chopped
1 teaspoon lemon juice

Steps:

  • Blend or process all ingredients until smooth.
  • Store covered in refrigerator for at least 2 hours or preferably overnight before using to allow flavours to develop.

  • Blend goat cheese, oil and yogurt in processor until smooth. Add herbs and season dip to taste with salt and pepper. Cover and refrigerate about 4 hours. Serve dip with toasted baguette slices and raw vegetables.

20 garlic cloves, unpeeled
1-2/3 cups crumbled farmer cheese (about 14 ounces)
1/4 cup loosely packed basil leaves

1/4 cup olive oil
2 green onions, coarsely chopped
2 tablespoons packed fresh parsley leaves
2 tablespoons water
4 teaspoons minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1/8 teaspoon cayenne pepper

Steps:

  • Place garlic in a small saucepan and cover with water. Bring to a boil. Reduce heat; simmer for 20 minutes or until softened. Drain and rinse in cold water; peel garlic. Place in a food processor., Add the farmer cheese, basil, cream cheese, oil, onions, parsley, water, rosemary and cayenne; cover and process until smooth. I've never made this recipe although have intended to many times. It is taken directly from Scandinavian Holiday Recipes. It doesn't specify whether to use fresh or dried tarragon but due to the amount I presume it would be dried.

16 oz. (2 packages) PHILADELPHIA Cream Cheese, softened
2 tsp. white wine vinegar
1/2 tsp. kosher salt
1/4 tsp. ground red pepper (cayenne)
6 sprigs fresh dill
6 sprigs fresh marjoram leaves
6 stems Italian parsley
2 sprigs fresh tarragon
2 stems fresh basil leaves
fresh vegetables, for serving

Steps:

  • Place the cream cheese in a large bowl and beat on medium until smooth and creamy.
  • Add the white-wine vinegar and salt, and beat on medium until incorporated.
  • De-stem and mince the fresh herbs. Add to the cream cheese mixture and beat on low until evenly distributed.
  • Garnish with fresh herbs and serve with fresh vegetables or crackers. Will keep refrigerated overnight.

We have all eaten herbed cheese, but most of it is store-bought and contains who-knows-what. This is a traditional herb cheese with almost nothing in it; you can also make it with fresh goat cheese or with Yogurt Cheese (preceding recipe). Serve with crackers, lightly toasted pita, and/or raw vegetable sticks.

Yield makes 6 or more servings

Number Of Ingredients 5

1/2 pound cold farmer cheese or cream cheese
1/4 cup sour cream
1 tablespoon fresh thyme leaves
1 garlic clove, peeled, or more to taste
Salt and black pepper to taste

Steps:

  • Combine all the ingredients in a food processor and blend until smooth. (Alternatively, mince the garlic and mash all the ingredients with a potato masher or fork until fairly smooth, then beat for a few moments with a wire whisk.) Taste and adjust the seasoning as necessary.
  • Scrape into a bowl and refrigerate until stiffened slightly. Serve cold.
