HERB STUFFED TOMATOES

5 beefsteak tomatoes
1 cup chopped flat-leaf parsley leaves
3/4 cup Italian-style bread crumbs
1 cup grated provolone
1/4 teaspoon freshly ground black pepper
1 teaspoon butter, softened
2 tablespoons extra-virgin olive oil

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the tomatoes in half, horizontally. Use a small spoon to gently hollow out the inside of the tomatoes, discarding the seeds and reserving the pulp and being careful not to puncture the outer shell. Chop the reserved pulp and put in a medium bowl. Add the parsley, bread crumbs, cheese, and pepper and mix gently to combine. Place the tomato halves in a buttered casserole dish, and fill with the bread crumb mixture. Drizzle the top of the tomatoes with olive oil. Bake until the tops are browned, about 20 minutes.

1 cup provolone cheese, grated

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the tomatoes in half, horizontally. Seed by gently squeezing the tomato halves. Use a small spoon to gently hollow out the inside of the tomatoes, being careful not to puncture the outer shell. Reserve the pulp.
  • Chop the reserved pulp and put in a medium bowl. Add the parsley, bread crumbs, cheese, optional garlic, and pepper and mix gently to combine.
  • Place the tomato halves in a buttered casserole dish, and fill with the bread crumb mixture.

1 cup chopped onion
1 garlic clove, minced
1 tablespoon plus 2 teaspoons butter, divided
1/4 cup plus 1 tablespoon seasoned bread crumbs
2 tablespoons grated Parmesan cheese
4 large tomatoes, halved
1 tablespoon chopped fresh basil
1 tablespoon minced fresh parsley

Steps:

  • In a small skillet, saute onion and garlic in 1 tablespoon butter until tender. Melt remaining butter. In a small bowl, combine the onion mixture, bread crumbs, cheese and melted butter. Spoon 2 tablespoons onto each tomato half., Place on a baking sheet. Broil 8 in. from the heat for 4-5 minutes or until lightly browned. Sprinkle with basil and parsley. Serve immediately.

Found this recipe in AllYou Magazine Sept 2008. Really can't mess this recipe up. I love using Campenelle tomatoes but if they are not available try finding Tomatillo tomatoes. Both of these are sturdy tomatoes that hold up well to stuffing/fillings and give you a good 2-3 bite appetizer.

8 tomatoes (Campenelle or Tomatillo would work best)
1 tablespoon unsalted butter
4 tablespoons olive oil
1/2 onion, finely chopped
4 garlic cloves, minced
3 cups fresh bread, crumbs
2 tablespoons chives, chopped
2 tablespoons fresh parsley, chopped
2 tablespoons fresh basil, chopped
1 teaspoon dried oregano
1 cup parmesan cheese, grated
1/4 cup tomato juice (saved from tomatoes above)
1 large egg, beaten
salt and pepper

Steps:

  • Preheat oven to 375°F Grease a 9x13" baking dish.
  • Cut tops off tomatoes and spoon out the flesh. Place flesh in a sieve and press down lightly to retain juices (you will need 1/4 cup of juice total). Blot insides of tomatoes with a towel to remove excess juices. Season insides with salt and pepper.
  • Melt butter with 2 tbs of the olive oil in a skillet over LOW heat. Add onion and saute for 5 minutes. Add garlic and saute for 3 minutes. Remove from heat.
  • Stir in bread crumbs, herbs and Parmesan. Stir in reserved 1/4 cup tomato juices and then the egg.
  • Stuff tomatoes with breadcrumb mixture. Place tomatoes in prepared baking dish in a single layer.
  • Drizzle with remaining 2 tbs of olive oil.
  • Bake for 30 minutes until topping is browned and crisp.
  • Serve immediately while hot/warm.

4 tomatoes (large vin ripened)
1/3 cup couscous
1 tablespoon currants
1/4 cup chicken stock (salt reduced)
1 tablespoon lemon juice
1 tablespoon almonds (slivered toasted)
1 tablespoon basil leaves (fresh chopped)
1 tablespoon parsley (fresh flat-leaf parsley leaves)
1 tablespoon chives (fresh finely chopped)
1 teaspoon extra virgin olive oil
salt and pepper (to taste)

Steps:

  • Preheat oven to 220C (200C fan forced).
  • Slice tops from the tomatoes and reserve.
  • Using a teaspoon, scoop out flesh and seeds and place tomatoes and tops on a baking tray and bake for 8 to 10 minutes or until just tender.
  • Place couscous and currants in a heatproof bowl.
  • Place stock and lemon juice in a microwave safe jug and microwave on high (100%) for 30 to 40 secons or until heated through.
  • Stir stock mix into couscous mix and cover and stand for 5 minutes and then using a fork, stir to separate grains.
  • Add almonds basil, parsley, chives and oil and season with salt and pepper and stir to combine.
  • Divide couscous mix between tomato shells and replace top and serve.

1/2-3/4 teaspoon salt
1 lb white button mushrooms, thinly sliced
3 tablespoons lemon juice
1/2 cup olive oil
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dry mustard
2 tablespoons parsley, finely chopped
1 tablespoon chives, finely chopped
1 teaspoon fresh basil, finely chopped
1/2 teaspoon dried marjoram
1 garlic clove, crushed

Steps:

  • Cut a 1"-1 1/2" opening in the stem end of each tomato.
  • Remove seeds and pulp.

4 yellow or red vine ripe tomatoes
Salt and pepper
1 1/2 cups fresh parsley tops, the yield of 1 large bundle
1 clove garlic, cracked away from skin
2 lemons, zested
1 teaspoon crushed red pepper flakes
1 teaspoon coarse salt
2 to 3 tablespoons rosemary, a few sprigs, leaves stripped from stems
1/2 cup sliced almonds, 4 ounces, a couple of handfuls
1 tablespoon red wine vinegar, a splash
1 tablespoon extra-virgin olive oil, a good drizzle

Steps:

  • Cut the tops of the tomatoes and seed with a spoon to hull them completely of seeds and liquid. Season the inside of the tomatoes with salt and pepper.
  • Place parsley in a food processor. Add garlic, lemons zest, red pepper flakes, salt, rosemary almonds, vinegar and oil to the processor. Pulse grind the mixture to combine.
  • Stuff 1/4 of the gremolade into each tomato and serve.
