Nonna Rosa's Fried Morels in Cornmeal image

I wait for the season each year. Nothing like them. When they're gone they're gone- till the next year. The anticipation is as good as the mushrooms!

Number Of Ingredients 5

5-6 morel mushrooms per serving
2 c white or yellow corn meal
1 Tbsp granulated sugar
1 pinch salt
1 pinch cracked ground pepper

Steps:

  • 1. Heat cooking oil in skillet over medium heat until pinch of flour sizzles. Make sure morels are clean and split in half lengthwise. Reserve in cold water.
  • 2. Mix cornmeal, sugar, salt and pepper together in large bowl. Carefully bread each mushroom half (like breading chicken)
  • 3. Fry in small batches. About 6 mushrooms per serving. Can be held on tray in warm oven until all are fried. Enjoy!
