3 cans (15 ounces each) black beans, rinsed and drained
2 cans (14-1/2 ounces each) beef broth
1 can (14-1/2 ounces) diced tomatoes, undrained
1-1/2 cups cubed fully cooked ham
1 can (4 ounces) chopped green chilies
1/4 cup red wine vinegar
1 large onion, chopped
3 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon pepper

Steps:

  • In a 3-qt. slow cooker, combine all ingredients. Cover and cook on high for 4-5 hours or until onion is tender.

1 ham bone with some meat
1 drizzle olive oil
3 stalks celery with leaves, chopped, or more to taste
½ onion, chopped
4 cloves garlic, crushed
½ (12 ounce) package baby carrots
1 cup fingerling potatoes, or to taste
1 small red bell pepper, seeded and chopped
4 cups water
1 (19 ounce) can black beans, drained and rinsed
1 (12 fluid ounce) can vegetable juice (such as V8®)
1 (11 ounce) can canned corn (such as Green Giant Niblets®), drained
2 tomatoes, chopped
2 tablespoons chopped green chilies
2 teaspoons ground cumin
salt and ground black pepper to taste

Steps:

  • Place ham bone in a large slow cooker.
  • Heat olive oil in a large saucepan over medium-high heat. Saute celery, onion, and garlic until onion is translucent, about 5 minutes. Pour mixture over the ham bone in the slow cooker.
  • Saute carrots, potatoes, and red bell pepper in the same saucepan until coated in oil, about 1 minute. Transfer vegetables to the slow cooker; add water, black beans, vegetable juice, corn, tomatoes, green chiles, cumin, salt, and black pepper. Cover and cook on High until soup is warm, 45 minutes to 1 hour. Reduce heat to Low; continue to cook for 5 to 6 hours.
  • Remove ham bone from the soup. Separate meat from the bone and return to the soup; discard the bone. Cover soup and refrigerate, 8 hours to overnight. Discard thick fat on the top of the soup and reheat.

8 cups water
1 pound Great Northern beans (or navy beans)
2 cups ham (diced cooked)
Optional: 1 ham bone (or ham hock)
1/2 cup onion (chopped)
1 carrot (chopped)
1 or 2 ribs celery (chopped or sliced thinly)
1 bay leaf
1/4 teaspoon black pepper (or to taste)
1 (8-ounce) can tomato sauce
1/2 teaspoon salt (or to taste)

Steps:

  • Gather the ingredients.
  • Bring the water and beans to a boil in a large saucepan or Dutch oven; boil for 2 minutes.
  • Remove the beans from heat, cover, and let stand for 1 hour.
  • Add the ham and ham bone or ham hock to the beans, along with onion, carrot, celery, bay leaf, and pepper. Bring to a boil.
  • Skim any foam from top.
  • Reduce heat, cover, and simmer until beans are tender-about 1 1/2 to 2 hours. If soup is too thick, add a little more water.
  • Take out ham bone or ham hocks from the soup, if using, and place on cutting board.
  • Dice or shred the meat and return it to the soup.
  • Add the tomato sauce and salt, to taste, and simmer for about 15 minutes longer.
  • Remove the bay leaf .

1 1/2 Tbsp oil
1 large onion, chopped
2 Tbsp minced garlic paste
6 c chicken broth
1 1/2 - 2 lb ham bone with meat attached
2 medium yukon gold potatoes - peeled and cut into 1 inch cubes ( about 2 cups )
2 - 3 carrots, peeled and cubed
2 - 3 medium stalks, celery including leaves, chopped
1 lb dry navy beans or could use great northern
1 tsp dried oregano
3/4 - 1 tsp salt
2 - 3 bay leaves
1/2 tsp each - cumin & black pepper

Steps:

  • 1. Either soak beans over night covered with water or cover with water and bring to a boil for 2 minutes then remove from stove and cover for 1 hour. ( make sure you pick through beans to remove any debris before either soaking method. ) In a heavy dutch oven over medium heat - add oil, once hot add onion and garlic. Cook and stir for about 5 minutes or until onion is tender. Remove from stove and add the broth, ham bone, beans, potatoes, carrots, celery, pepper, cumin, salt, oregano and bay leaves.
  • 2. Bring to a boil then reduce to simmer, cover and cook for 1 hour 30 minutes. Remove bone and cool, then remove meat and add back to pot. Continue simmering for another 45 minutes to 1 hour or until beans are desired tenderness. Remove bay leaves. Taste and if needs more seasoning add it and stir.
  • 3. Serve in individual bowls with some crusty bread. Delicious!

1 can (15 oz) black-eyed peas, drained
4 large Yukon Gold potatoes (about 2 lb), peeled, cubed
1 bag (6 oz) fresh baby spinach leaves

Steps:

  • Coarsely chop ham; reserve bone. In 6-quart Dutch oven, heat oil over medium-high heat. Cook chopped ham in oil 6 to 8 minutes, stirring occasionally, until browned.
  • Add white onion, green onions, carrots, celery, soup base and pepper. Cook 5 minutes, stirring frequently, until onion is tender.
  • Stir in reserved ham bone, the navy beans, cannellini beans, black-eyed peas and potatoes. Add enough water to cover. Heat to boiling; reduce heat to low. Cover; cook 45 minutes, stirring occasionally. Remove and discard ham bone. Stir in spinach just before serving.

Hearty ham and bean soup. Easy to make and a great way to use a leftover ham bone. This soup also has lots of mixed vegetables.

1 pound dry great Northern beans
8 cups water
½ teaspoon salt
1 ham hock
1 cup chopped carrots
½ stalk celery, chopped
1 cup chopped onion
1 teaspoon minced garlic
1 teaspoon mustard powder
2 bay leaves
2 cups chopped ham
½ teaspoon ground white pepper

Steps:

  • Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
  • After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
  • Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.
