½ cup peanut butter
½ cup ground flax seed
½ cup chocolate chips
⅓ cup honey
1 tablespoon chia seeds
1 teaspoon vanilla extract

Steps:

  • Combine oats, peanut butter, ground flax seed, chocolate chips, honey, chia seeds, and vanilla extract together in a bowl. Cover and chill dough in the refrigerator 30 minutes.
  • Remove dough from refrigerator; roll into balls, about 1 inch in diameter.

3 cups old fashioned oats
1/4 cup ground flax seeds
2 tablespoons cocoa
1/2 cup dried cranberries
1/2 cup chopped walnuts
1/2 cup mini chocolate chip
1 cup peanut butter
3/4 cup honey
1/4 cup coconut oil
flaked coconut, for coating balls

Steps:

  • Mix all ingredients except flaked coconut. Mix well then form into balls, roll in coconut flakes until well coated. Refrigerate in a sealed container for a few hours until they have firmed up. At this point I usually put most of them in the freezer.
