1 tablespoon unsweetened cocoa powder
1 tablespoon ground flax seed
1 ½ teaspoons maple syrup
¼ teaspoon vanilla extract
1 pinch salt
1 ½ teaspoons honey
1 teaspoon coconut oil
2 tablespoons crushed pecans
1 tablespoon unsweetened flaked coconut

Steps:

  • Combine oats, cocoa powder, flax seed, maple syrup, vanilla extract, and salt in a saucepan over medium heat; cook and stir until thick, 10 to 15 minutes. Transfer oatmeal to a bowl.
  • Combine honey and coconut oil in a microwave-safe bowl; heat in microwave until melted, about 20 seconds. Pour honey mixture over oatmeal and top with pecans and coconut.

1/4 cup whole wheat flour
1/2 cup brown sugar
2 tablespoons butter
1/3 cup unsweetened flaked coconut
1/3 cup pecans, chopped
1/2 cup unsweetened cocoa powder
2 ounces dark chocolate chips
1/2 cup boiling water
1 cup sugar
1/3 cup canola oil
2 teaspoons vanilla extract
1 egg
1 cup whole wheat flour
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup soymilk, plus
2 tablespoons soymilk
1 teaspoon vinegar
glaze
1 cup powdered sugar
4 teaspoons low-fat milk

Steps:

  • Preheat oven to 325°F Coat a Bundt cake with cooking spray and coat lightly with flour.
  • Combine flour and brown sugar in a bowl. Cut in the butter and incorporate until mixture resembles coarse meal. Stir in coconut and pecans.
  • Combine cocoa and baking chocolate in a bowl and add boiling water stirring until chocolate melts. Set aside.
  • Combine sugar, vanilla, egg and oil. Add flour, baking powder and baking soda to mixture. Combine.
  • Add soy milk and vinegar and combine.
  • Stir in cocoa mixture and combine with bather.
  • Spoon half of the batter into prepared pan, top with streusel. Spoon remaining batter over streusel.
  • Bake for 1 hour or until wooden pick inserted in center comes out clean.
  • Cool in pan for at least 10 minutes and remove form pan. Cool completely.
  • Combine glaze ingredients and drizzle over cake. Enjoy!

I was looking for a sugar free chocolate cake and couldn't find one so I made this one up, I just had a slice and its fantastic!!! there isnt even butter in the recipe. Its a one bowl recipe so little mess as well.

1 1/4 cups honey
1 3/4 cups whole wheat flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1/2 cup milk or 1/2 cup soymilk
1/2 cup applesauce
2 teaspoons vanilla extract
1/2 cup boiling water
2 tablespoons olive oil

Steps:

  • DIRECTIONS.
  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine inch round pans.
  • In a large bowl, stir together the honey, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.
  • Bake 50 minutes to an hour in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.

For cake;
225g self-raising flour
70g coca powder
200g demerara sugar
150ml sunflower oil
300g cooked fresh beetroot
3 large eggs
3 tbsp milk
For topping;
200g white chocolate, broken into cubes
300g low fat soft cream cheese
25g grated chocolate or chocolate curls

Steps:

  • 1. Preheat the oven to 180c/350f/gas 4. Line the base of a 20cm round loose-bottom cake tin with a disc of baking parchment. Lightly brush the sides of the tin with a little oil. 2. Sift the flour and cocoa into a large bowl and stir in the sugar. 3. In a food processor, blend together the oil, beetroot, eggs and milk and pour over the dry ingredients. Mix thoroughly. 4. Spoon the mixture into the prepared ton and level with the back if the spoon. Bake for 40 minutes, or until a skewer comes out clean when inserted into the centre of the cake. Cool cake completely. 5. To decorate, melt the white chocolate cubes in a bowl over a pan of gently simmering water until smooth. Remove from the heat then beat well with the cream cheese. 6. Spread the mixture over the sides and top of the cake roughly with a palette knife. Scatter grated chocolate or chocolate curls over the top. Serve and enjoy.
