BAKED CHICKEN WONTONS

Baked Chicken Wontons are a healthier version of the classic cream-cheese wonton, with a chicken filling flavored with sesame, green onions and sriracha.

PAM Cooking Spray
1/2 pound chicken tenders (approximately 5)
6 ounces cream cheese (room temperature)
2 cloves garlic (minced)
1-2 tablespoons minced shallots or yellow onion (finely diced)
2 green onions (thinly sliced)
2 teaspoons soy sauce
1 teaspoon sesame oil
1 teaspoon sriracha
20 2- inch wonton wrappers
1 large egg (beaten)
salt and pepper (to taste)

Steps:

  • Spray a medium skillet with PAM Cooking Spray and add chicken; season with salt and pepper to taste.
  • Place skillet over medium-high heat and cook 2 to 3 minutes; spray skillet again with PAM Cooking Spray and turn chicken over. Continue to turn chicken every 2 to 3 minutes until chicken is thoroughly cooked and becomes a golden brown, 6 to 8 minutes. Remove chicken from the skillet and cool. Once cool, roughly chop chicken and set aside.
  • In a medium mixing bowl, stir together and combine: cream cheese, shallots, garlic, green onions, soy sauce, sesame oil and sriracha. Once chicken has cooled and is chopped, stir it into the cream-cheese mixture. Season with salt and pepper as needed.
  • Preheat oven to 400 degrees F. Lightly oil a large baking sheet using PAM Cooking Spray. In a small bowl, add in egg and 1 teaspoon of water, whisk until frothy, and set aside.
  • Assemble wontons: Lay out wrappers on your work surface, then spoon about 1 tablespoon of cream-cheese mixture into the center (I used a small cookie dough scooper). Then, using your fingers (I use my middle and pointer fingers together), rub the edges of the wrappers with egg/water mixture. Pull up two sides and pinch in the center; bring up the other two sides, creating an "X," and seal all the edges together by pinching them. Place wonton on the prepared pan and repeat with remaining wontons and filling.
  • Placing the wontons into a single layer on the prepared pan, place in the oven and bake for 8 to 10 minutes, or until golden brown and crisp. NOTE: Be sure to check about 4 to 5 minutes into cooking time; you don't want to overcook these.
  • Serve immediately and devour.
  • *Cooking time of the chicken may vary depending on how thick your chicken is sliced into the chicken tenders.

1/2 pound ground pork
1/2 pound extra-lean ground turkey
1 small onion, chopped
1 can (8 ounces) sliced water chestnuts, drained and chopped
1/3 cup reduced-sodium soy sauce
1/4 cup egg substitute
1-1/2 teaspoons ground ginger
1 package (12 ounces) wonton wrappers
Cooking spray
Sweet-and-sour sauce, optional

Steps:

  • In a large skillet, cook the pork, turkey and onion over medium heat until meat is no longer pink; drain. Transfer to a large bowl. Stir in the water chestnuts, soy sauce, egg substitute and ginger., Position a wonton wrapper with one point toward you. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Place 2 heaping teaspoons of filling in the center of wrapper. Fold bottom corner over filling; fold sides toward center over filling. Roll toward the remaining point. Moisten top corner with water; press to seal. Repeat with remaining wrappers and filling., Place on baking sheets coated with cooking spray; lightly coat wontons with additional cooking spray. , Bake at 400° for 10-12 minutes or until golden brown, turning once. Serve warm, with sweet-and-sour sauce if desired. Freeze option: Freeze cooled baked wontons in a freezer container, separating layers with waxed paper. To use, reheat on a baking sheet in a preheated 400° oven until crisp and heated through.

2 tablespoons butter, melted
1 tablespoon canola oil
Plum or sweet-and-sour sauce

Steps:

  • In a large bowl, combine the chicken, carrots and water chestnuts. In a small bowl, combine the cornstarch, water, soy sauce and ginger until smooth. 1 cup cubed cooked chicken
½ cup Borden® Cheddar and Monterey Jack Shreds
½ cup jalapeno-flavored cream cheese, softened
Nonstick cooking spray
24 square wonton wrappers
Salsa, for serving

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with parchment paper.
  • Place cooked chicken cubes in a food processor. Pulse until chicken resembles crumbs. Add shredded Cheddar and Monterey Jack cheese and jalapeno cream cheese. Pulse 2 or 3 times until mixed. If mixture appears dry, add more cream cheese, 1 tablespoon at a time.
  • Place a heaping teaspoon of chicken-cheese mixture on the bottom corner of a wonton wrapper. Leave a 1/2 inch border around wonton. Brush the edges with water and fold over opposite corner to form a triangle. Press to seal edges. Repeat for all wontons.
  • Place wontons on prepared baking sheet. Spray lightly with cooking spray. Turn; lightly spray other side of wontons with cooking spray.
  • Bake in preheated oven until the edges turn brown, 8 or 9 minutes.
  • Serve warm with salsa or soy sauce.

2 skinless, boneless chicken breast halves, minced
1 egg
1 green onion, minced
1 ½ tablespoons soy sauce
1 tablespoon Asian (toasted) sesame oil
1 tablespoon vegetable oil
¼ teaspoon salt
50 wonton wrappers
2 cups cold water

Steps:

  • Mix chicken, egg, green onion, soy sauce, sesame oil, vegetable oil, and salt in a large bowl until evenly combined.
  • Scoop about 1 teaspoon chicken mixture and place into the center of a wonton wrapper. Moisten 2 adjacent edges of the wrapper with water and fold into a triangle. Connect the two lower points of the wrapper and moisten to seal and make a hat shape. Repeat with remaining chicken and wonton wrappers.
  • Bring a large pot of water to boil. Stir wontons into boiling water. Add 1/2 cup cold water and allow water to return to a boil. Repeat boiling with another 1/2 cup cold water. Wontons are ready when chicken is no longer pink in the center, about 5 minutes. Drain.
