Number Of Ingredients 12

1/2 cup warm water (110° to 115°)
2 packages (1/4 ounce each) active dry yeast
1/2 cup butter, softened
1 cup pineapple juice
1 cup whole milk
7-1/2 to 8 cups all-purpose flour, divided
3/4 cup mashed potato flakes
2/3 cup sugar
1 teaspoon salt
1/2 teaspoon ground ginger
3 large eggs, room temperature, lightly beaten
2 teaspoons vanilla extract

Steps:

  • In a small bowl, dissolve yeast in warm water; let stand until bubbles form on surface, 5 minutes. Meanwhile, in a small saucepan, heat butter until melted. Add pineapple juice and whole milk and continue to heat gently until mixture reaches 110° to 115°. In a large bowl, combine 3 cups flour, potato flakes, sugar, salt and ginger. Add yeast and butter mixtures to dry ingredients; beat just until moistened. Add eggs; beat until smooth. Beat in vanilla. Stir in enough remaining flour to form a soft dough; dough will be sticky. , Turn dough onto a floured surface; with floured hands, knead until smooth and elastic, about 8-10 minutes, adding more flour to surface and hands as needed. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/4 hours., Punch dough down. Turn onto a lightly floured surface; divide into thirds. Shape each into a ball. Place in 3 greased 9-in. round baking pans lined with parchment. Cover and let rise until doubled, about 45 minutes. Preheat oven to 350°. Bake until golden brown and internal temperature of loaves reaches 200°, 30-35 minutes, covering loosely with foil during the last 10 minutes of baking if needed to prevent tops from over-browning. Remove from pans to wire racks to cool.

I have always liked hawaiian sweet bread and I came across this recipe not to long ago and found that it tasted just like the store bought bread.

6 cups plain flour
3 eggs
1 cup pineapple juice
1 cup water
3/4 cup sugar
1/2 teaspoon ginger
1 teaspoon vanilla
2 (1/4 ounce) packages yeast
1/2 cup margarine

Steps:

  • Beat eggs; add pineapple juice, water, sugar, ginger, vanilla and melted margarine.
  • Put 3 cups flour in a large mixing bowl.
  • Add egg mixture and stir until well mixed.
  • Sprinkle in yeast, 1 package at a time, mixing well.
  • Gradually add other 3 cups flour. Batter will be hard to mix with spoon. You may have to use your hand. Make sure it's mixed well.
  • Leave batter in bowl and cover with cloth and place in warm place. Let rise 1 hour.
  • Remove from bowl and knead in 1/2 cup flour. Knead about 10 times. Divide into 3 equal parts and place in well greased round cake pans.
  • Cover and place in warm place and let rise about 1 hour.
  • Bake at 350degrees 25 to 30 minutes.

Every time I make these rolls, I get raving compliments! This is an excellent potluck dish! It is very important to use McCormick brand coconut extract for the right flavor! For the fluffiest rolls, make sure all the ingredients and the kitchen are warm. This was intended to be a copycat of King's Hawaiian Rolls, but according to my husband, these taste way better when done right!

1 cup 100% pineapple juice
1 large egg
1/3 cup milk
4 tablespoons butter
1 -2 teaspoon mccormick coconut extract
1/2 teaspoon ground ginger
1 teaspoon salt
1/3 cup sugar
1/2 cup potato flakes
3 1/2 cups flour
2 1/4 teaspoons active dry yeast
butter, for brushing on roll tops

Steps:

  • Bring all cold ingredients to room temperature (pineapple juice, egg, milk, butter). This will take about 30 minutes, but you can speed it up a little bit with the microwave if you're not feeling patient.
  • Add the pineapple juice to your bread machine.
  • Beat the egg and add to your bread machine.
  • Add the milk to your bread machine.
  • Divide the butter into small pieces (no larger than 1 tablespoon) and add to the bread machine.
  • Add McCormick coconut extract, ground ginger, salt, sugar, potato flakes, and flour to the bread machine, in that order.
  • Make a small well in the flour, and pour the yeast in the well.
  • Run your bread machine on the dough cycle to knead the dough.
  • After the kneading cycle, let the dough rise until doubled in size - about 1 hour. (I let mine rise in the bread machine).
  • Grease a 13"x9" pan.
  • Divide the dough into 12-15 rolls and place next to each other in the pan (this will get them soft sides).
  • IMPORTANT! Sometimes the dough will be a little sticky to handle while you're doing this (and that's okay!). Do NOT even think about adding more flour! I mean it! I can't stress that enough! It will toughen your rolls. You can try greasing your hands with cooking spray if you want them to be easier to handle. If that still doesn't work, then just enjoy the stickiness knowing that your rolls will be nice and fluffy!
  • Cover with a towel and let rise until doubled in size - about 1 hour - in a warm place. Meanwhile, preheat your oven to 350 degrees.
  • Bake rolls in preheated oven for 25 minutes or until golden on top.
  • Immediately upon removing the rolls from the oven, brush the tops with butter.
  • Let cool in the pan until the rolls are cool enough to handle. Then remove from pan.
  • TIP: If you will not be eating the rolls right away, transfer the rolls to a large enough bowl to hold them. Place a lid on top and vent it, taking care that no rolls touch the lid. Closing the airflow off while they are warm will make the rolls soggy. Leaving them out in open air will make the rolls crusty. Keeping them in a vented bowl until they are completely cool is very important for obtaining soft rolls! Once the rolls are completely cool, seal the bowl.

1 cup pineapple chunks, fresh, canned or dried
1 cup cranberries, fresh, canned or dried
1 cup chestnuts, toasted, cleaned and chopped
1 tablespoon fresh sage, chopped
1 tablespoon fresh thyme leaves
1 pound link turkey, chicken or pork sausage
1 tablespoon canola oil
2 medium onions, diced
5 stalks celery, diced
5 cloves garlic, minced
1 cup whole milk
1 cup chicken or vegetable stock
2 pineapples, centers hollowed out

Steps:

  • Preheat oven to 350 degrees F.
  • Tear the bread by hand into large, bite size pieces and spread out in a single layer on a sheet pan. Place the bread in the oven until it is dry and toasted, about 15 minutes. Remove the bread and place into a large mixing bowl. Mix in the pineapple chunks, cranberries, chestnuts, sage and thyme. Set aside. Cut the sausage into 1/4 inch rounds. In a large sauté pan over medium high heat, add the oil and brown the sausage. Once the sausage is browned, drain any excess fat from the pan and add the onions and celery to the sausage, allowing them to sweat, about 10 minutes. Add the garlic and cook for another 3 minutes. Add the sausage mixture to the bread. Pour the milk and stock over the bread and sausage mixture, stirring to incorporate. Hawaiian bread very similar to King's. Most recipes on Food.com/Zaar are for 1.5 lb loaves -- tried to reduce amounts with NO success. Came up with this for the 1lb loaf and machine. In all honesty, I used all-purpose flour (all I had in the house) first time making this "modified" recipe -- using tips from several sources and recipes. Absolutely fabulous!

3/4 c pineapple juice, lukewarm 105º-110º
1/2 c milk, lukewarm, 105º-110º
1 large egg, slightly beaten
2 to 3 Tbsp honey
1 tsp salt
3 c bread flour
2 Tbsp softened butter
1 pkg quick rising yeast (2-1/4 tsp)

Steps:

  • 1. IMPORTANT: PLACE INGREDIENTS IN BREAD PAN IN THE EXACT ORDER LISTED
  • 2. Measure flour and salt and set aside. For a lighter textured bread, sift flour mixture
  • 3. Pineapple juice and milk should be lukewarm. you can warm in microwave for 20 to 30 seconds. Slightly beat egg and mix with pineapple juice and milk. Add honey and stir to blend Pour mixture gently into bread pan, do not splash.
  • 4. Add flour mixture carefully over top of liquid, making certain to cover all the liquid with flour
  • 5. Cut butter into 4 equal pieces and place one piece in each corner of pan on top of flour
  • 6. Make a well in the middle of the flour mixture and pour the yeast into it.
  • 7. Set cooking cycle for basic or rapid with light or medium crust (depending on your preference). Press start and smell the wonderful odors permeating your house.
  • 8. Allow to completely cool after removing from pan before you wrap or bread will get soggy and/or rubbery.

KING'S HAWAIIAN SWEET BREAD - REVISED



King's Hawaiian Sweet Bread - REVISED image

I'm a big fan of King's Hawaiian Sweet bread. What I'm not a fan of is the high price to buy it when making it at home is not only convenient and fresh, but much less cost. I scoured the web for this sweet bread and found several variations, all of which I tested but not satisfied of being like King's. Many of the recipes I have found on the web incorporate "pineapple juice". While you certainly can replace some or all of the water with juice, I did not notice this ingredient on the King's bread package. The main ingredients (those listed first on the package) are Flour, Water, Sugar, Liquid Sugar (sugar water), butter and eggs. Then comes (in smaller percentages) the yeast, potato flour, whey, nonfat milk, salt and datem. After that are listed elements that I quickly determined to be a dough conditioner. I made my own by searching online. You can use any dough conditioner you prefer.

  • To make the sugar water, in a small bowl use 1 cup of boiling water and dissolve 3/4 cup of sugar. You can add more if you like as long as it fully dissolves.
  • Once the sugar water temperature drops into the 100-115 degree range, add the yeast and ginger.
  • In another small bowl, add the eggs, sugar, salt and vanilla and mix until all well incorporated.
  • Allow the melted butter to cool down (but not go solid). Take a spoonful of the egg/sugar mixture and mix with the melted butter to 'temper' it, then pour the melted butter into the egg/sugar mixture and mix well. You do not want to just pour hot butter into the egg mixture as it could 'cook' the egg and form curds.
  • In the mixer, put in the bread flour, potato flour, dough conditioner and powdered milk and briefly mix.
  • Once the yeast mixture has foamed, start the mixer on low and pour in the yeast mixture and then the egg mixture.
  • Once the ingredients are mixed thoroughly, stop mixing and let it rest about 10 minutes.
  • Start the kneading process. The dough should feel a little 'tacky' to the touch but should not stick to your hand and fingers when you pull it away. Knead for at least 10 minutes and then test it using the 'window pane' test.
  • Once the dough is well kneaded, form a ball by pulling the sides of the dough under itself to form a tight skin on top.
  • Lightly coat a bowl with oil (I use a cooking spray) and place your dough ball in it, rolling the ball in the bowl to coat it. Cover with plastic wrap and place in a warm place to rise for about 2 hours or until it has doubled in size.
  • When dough has doubled, place on a floured surface and hand knead for about 30 seconds, then form it into a ball again by tucking the sides under.
  • Lightly spray a pie tin with oil and place the dough ball in it. Cover with a large bowl or plastic wrap and let it rise again for 1 hour in a warm place, or until it has risen to cover the bottom of the tin with a nice dome.
  • 30 minutes before baking, preheat the oven to 350 deg. and set an oven rack for baking in the middle/center.
  • Bake in the pie tin on the middle rack for about 40 minutes. You should see a nice golden brown crust and the interior temperature should be about 200 deg. using a fast acting digital thermometer. If the color is achieved but more time is needed, cover the top with aluminum foil to prevent further browning and to allow the inside to continue baking.
  • When done, remove to a cooling rack. You can leave it in the pie tin or remove it and place bread directly on rack. Cool for 30 minutes before tearing and serving.

1 one-pound circular loaf of Hawaiian sweet bread
1/4 pound thin-sliced smoked turkey
1/4 pound thin-sliced roast beef
1/4 pound thin-sliced baby Swiss
1 tomato, thinly sliced
Mayonnaise
Dijon mustard
Poppy seeds
Butter
Salt
Pepper

Steps:

  • 1. Take the Hawaiian break out of its tin and cut it into 5 equally-thick slices (parallel to the table, to make a big sandwich). 2. Return the bottom slice to the tin, coat it with a 4-to-1 mixture of Dijon mustard and mayonnaise, and spread the slices of roast beef on the top. 3. Place the next slice of bread on top of the roast beef, coat it with melted butter, and spread the slices of baby swiss on the top. 4. Place the third slice of bread on top of the baby Swiss, coat it with melted butter, sprinkle poppy seeds on it, and spread the slices of smoked turkey on the top. 5. Place the next-to last slice of bread on top of the smoked turkey, coat it with a 4-to-1 mixture of mayonnaise and Dijon mustard (the inverse of the bottom layer, spread the slices of tomato on the top, and add a little salt and pepper on top. 6. Place the last slice of bread on top, wrap in foil, and bake for 20 minutes at 350 degrees Fahrenheit. Uncover and bake for another 1-2 minutes to give the bread a nice crispness.

I'm a fanatic bread maker who likes to tinker with recipes by altering weights and ingredients in order to achieve my goal of a great bread. As a big fan of King's Hawaiian® bread (and rolls), I tried all kinds of online recipes but did not find one that was close enough to the original. While King's does not use a roux (nor pineapple juice), if you want fluffy, pillowy texture that keeps for a few days, this technique is key! All my friends go nuts over this bread.

3 ½ ounces all-purpose flour
17 ½ fluid ounces water
½ cup pineapple juice
5 tablespoons butter
¼ cup honey
19 ounces bread flour, divided, or more as needed
1 ounce nonfat dry milk powder
2 (.25 ounce) packages instant yeast
1 teaspoon sea salt
1 egg, at room temperature
1 egg yolk, at room temperature

Steps:

  • Mix flour and water in a saucepan until flour is completely dissolved. Cook over medium-low heat, stirring constantly, until mixture reaches 149 degrees F (65 degrees C) on an instant-read thermometer, about 5 minutes. Remove water roux from heat.
  • Measure 5 3/4 ounces of the water roux into a bowl and let cool to below 130 degrees F (54 degrees C).
  • Combine pineapple juice, butter, and honey in a saucepan. Heat, stirring frequently, until butter is mostly melted and mixture reaches 120 to 130 degrees F (49 to 54 degrees C), 3 to 5 minutes.
  • Combine 9 ounces bread flour, milk powder, yeast, and salt in the bowl of a stand mixer fitted with the paddle attachment. Mix well. Pour in water roux and pineapple juice mixture while beating on low speed. Mix in egg and egg yolk. Increase speed to medium and beat for 3 minutes.
  • Switch to the dough hook attachment. Mix dough on low speed while adding remaining bread flour, a little at a time, until dough pulls away from the sides of the bowl. Add a bit more flour if dough isn't pulling away from the sides of the bowl. Knead for 5 minutes.
  • Remove dough from the mixer and shape into a ball. Place in a lightly greased bowl. Cover and let rise in a warm, draft-free area until nearly doubled in size, about 1 hour.
  • Gently press any air bubbles out of the dough. Form into a round loaf and place seam-side down in a greased pie pan. Cover and let rest until dough rises to the edges of the pan, about 15 minutes.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
  • Uncover dough and bake in the preheated oven until an instant-read thermometer inserted into the center reads 195 to 205 degrees F (90 to 96 degrees C), about 45 minutes. Tent loaf with aluminum foil if crust is browning too quickly. Cool on a wire rack before slicing.
