HAWAIIAN RIB-EYE STEAK

Steak
2 cups pineapple juice
1/2 cup soy sauce
1/2 cup sugar
5 tablespoons apple cider vinegar
2 teaspoons toasted sesame oil
1/3 cup chopped white onion
1 1-inch piece ginger, peeled, finely chopped
2 (1-inch-thick) bone-in rib-eye steaks (about 3 pounds total)
Butter and Assembly
4 tablespoons unsalted butter, room temperature
2 teaspoons toasted sesame oil
Kosher salt

Steps:

  • Steak
  • Whisk pineapple juice, soy sauce, sugar, vinegar, and oil in a small bowl until sugar is dissolved. Add onion and ginger. Set aside 2 Tbsp. marinade for butter. Transfer remaining marinade to a large resealable plastic bag. Add steaks and seal bag, pressing out excess air. Chill at least 1 day.
  • Remove steaks from marinade, pat dry, and let sit until room temperature, about 1 hour.
  • Butter and Assembly
  • Whisk butter and oil in a medium bowl to combine. Vigorously whisk in reserved marinade; season with salt. Transfer to the center of a sheet of parchment paper and roll up into a log. Chill until firm, at least 1 hour.
  • Build a two-zone fire in a charcoal grill for direct (medium-high coals) and indirect (medium-low coals) heat. Alternatively, heat a gas grill to high just before cooking, leaving one burner on low. Season steaks very lightly with salt (omit this step if marinating more than 24 hours). Grill over high heat, turning, until steaks are well browned and beginning to char around edges, about 4 minutes. Transfer to cooler part of grill and continue to cook until an instant-read thermometer inserted into thickest part of steaks registers 120°F for medium-rare. (Alternatively, cook in a grill pan over medium-high heat, turning steaks every couple of minutes.)
  • Transfer steaks to a wire rack. Slice butter into 1/4"-thick rounds and divide between steaks. Let rest at least 10 minutes before slicing.
  • Do Ahead
  • Steaks can be marinated 3 days ahead. Keep chilled. Butter can be made 3 days ahead. Keep chilled.

1 head garlic, peeled and coarsely chopped
1 knob ginger, peeled and thinly sliced
1 large onion, thinly sliced
3 pounds sirloin tip, sliced into 3/4-inch thick steaks
1 fresh pineapple
3 tablespoons butter
Sliced scallions, for garnish

  • For the steak:
  • Combine all ingredients in a resealable plastic bag. Squeeze out as much air as possible and marinate the steak in the refrigerator at least 8 hours or overnight. Remove the meat from the marinade and place on the grill. Grill to desired temperature; medium-rare is best.
  • Pineapple Raft:
  • Core and slice a fresh pineapple into 1/4-inch rectangles. Melt 3 tablespoons of butter. Place pineapple rafts on the grill and brush with melted butter. Grill until warm, with nice grill marks.
  • Serve with the grilled beef, if desired, garnished with scallions.

  • In a bowl, whisk together all of the ingredients, except the onions, Essence, and peppercorns.
  • Place the steaks in a large sealable bag with the marinade. Seal and refrigerate for at least 12 hours, and up to 36 hours.
  • Preheat a grill.
  • Remove the steaks from the marinade and pat dry. Season both sides with 1 tablespoon of the Essence and the peppercorns. Pour the marinade into a small saucepan and bring to a simmer. Simmer until thickened and reduced by 1/3 in volume, about 5 minutes, stirring occasionally. Remove from the heat.
  • Sprinkle the thick onion slices with the remaining 1 tablespoon of Essence.

1 1/2 to 2 pounds good quality flank steak, skirt, or rib eye
1 bottle Veri Veri Teriyaki marinade (Soy Vay brand)
1 cup pineapple juice

Remove the steak from the refrigerator about 30 minutes prior to cooking. Heat your grill to high. Remove the steak from the marinade and pat dry with paper towels. Season with salt and pepper and set aside. For the glaze, pour the remaining marinade into a small saucepan. Bring to a boil and then simmer until slightly thickened and reduced by half. Grill the steak for about 6 to 8 minutes on each side (medium-rare), brushing them with the glaze in between each turn. 1 cup mango or papaya, finely diced 1/2 inch

For Marinade
cider, 3/4 cup
pineapple (canned), 3/4 cup - drained
garlic clove, 2 - crushed
dried and ground ginger, 1-1/2 tsps
soy sauce, 1-2/3 cups
sugar, 1-2/3 cups

Steps:

  • In a saucepan, mix all the marinade ingredients. Place saucepan over the flame and bring to a boil. Cover with lid and let it simmer on low flame for an hour. Remove from heat, place aside and allow to cool entirely. Take a glass baking dish and the steaks in it. Pour the marinade over it and refrigerate for about 4 hours. In the meantime, you need to get your grill ready. In case you have a gas grill, set to medium temperature. If you like smoke flavored meat, you can use a charcoal grill. Heat the grill, until the coals glow and spread them out evenly. Next, remove the steak from the marinade and place on the grill for 4-6 mins per side. When done, remove from grill and keep aside for a few minutes before serving.

6 ounces pineapple juice (I always add more)
1 cup soy sauce (I sometimes add a little less of this one and more pine)
1⁄2 cup brown sugar
2 teaspoons garlic powder
2 teaspoons minced garlic cloves

Steps:

  • I combine it all on the stove then bring to a boil -- Allow marinade to cool. Once marinade cools off pour into a container or bag and place the steaks in it and let it sit for 72hrs.

I was looking through marinade recipes and none really gave me the taste i wanted so i pieced this one together with what i had in the kitchen and it came out perfect.

1 cup(s) soy sauce, dark
1 tablespoon(s) olive oil
1 can(s) pineapple chunks, fresh
2 pinch(es) black pepper
2 tablespoon(s) garlic minced
1 - onion, yellow, medium minced
2 - beef sirloin steak, boneless
3 dash(es) oregano, dried
2 dash(es) basil, dried
1 dash(es) parsley flakes
1 dash(es) marjoram, dried
1 dash(es) rosemary, dried

Steps:

  • In a deep bowl or container mix all ingredients and lay the steak cuts in the mixture. Try to completley submerge both cuts and spread the onions and pineapple evenly on top (and under if possible) the steaks. Let it sit for a day, covered to soak in all the flavoring. (the meat will start browning due to the citric acid and liquids being soaked in)
  • The next day just throw it on a frying pan cooking it with a little bit of the marinade (so you don't need oil or butter to grease the pan)and some of the pineapple on med to high heat until desired rarity.
  • Serve and enjoy!
