JO'S HAWAIIAN CHICKEN BURGERS

I concocted this burger while craving a juicy burger with great flavor. Next time, I would like to mince the jalapenos and add them into the ground chicken patties...when the kids are not joining us for dinner.

1 teaspoon olive oil
⅓ cup diced red onion
2 teaspoons minced garlic
1 teaspoon minced fresh ginger
1 pound ground chicken
¾ cup panko bread crumbs
2 tablespoons teriyaki sauce
salt and ground black pepper to taste
4 pineapple rings
4 slices provolone cheese
4 hamburger buns, split
2 tablespoons light mayonnaise, or to taste
8 canned jalapeno pepper slices, or to taste

Steps:

  • Heat oil in a small skillet over medium heat. Add red onion, garlic, and ginger; saute until onion has softened and turned translucent, about 5 minutes. Set aside to cool.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Combine chicken, panko, teriyaki sauce, salt, and pepper in a large bowl. Add cooled onion and mix gently with your hands until fully incorporated. Create 4 burger patties.
  • Grill burgers on the preheated grill until cooked through, 5 to 6 minutes per side, adding provolone slices towards the end of the cooking time so they can melt. An instant-read thermometer inserted into the center of the burgers should read at least 165 degrees F (74 degrees C). Grill pineapple slices alongside the burgers until warm, about 1 minute per side.
  • While the burgers are cooking, prepare hamburger buns with a light smear of mayonnaise. Place cooked burgers on buns and top with pineapple slices and jalapeno peppers.

1/2 cup dry bread crumbs
1/2 cup sliced green onions
1/2 cup chopped sweet red pepper

Steps:

  • Drain pineapple, reserving 1/4 cup juice (discard remaining juice or save for another use); set pineapple aside. In a large bowl, combine the bread crumbs, onions, red pepper, soy sauce, salt and reserved pineapple juice. Crumble turkey over mixture and mix well. Shape into 4 patties., On a lightly oiled grill rack, grill, covered, over medium heat for 3 minutes on each side. Brush with teriyaki sauce. BURGER PATTIES
1 1/2 lb (750 g) lean ground beef
1/4 c panko® breadcrumbs
5 Tbsp onions, finely chopped and divided
ground himalayan sea salt, to taste
freshly ground black pepper, to taste and divided (i always use mixed peppercorns)
3 Tbsp pineapple, finely chopped
3 Tbsp sharp white cheddar cheese, grated
1/2 c teriyaki sauce, divided
TOPPING SAUCE
2 Tbsp teriyaki sauce
2 Tbsp miracle whip®
TOPPINGS
3 slice pineapple
3 slice sharp white cheddar cheese
3 hamburger buns

Steps:

  • 1. In a large mixing bowl, add ground beef, breadcrumbs, 2 tbsp. onions, sea salt and black pepper. Mix the ingredients until well distributed.
  • 2. Split the ground beef mixture into two pieces; one will be smaller than the other. Take the biggest one and divide it into 3 equal pieces - these will become the patties we'll put the stuffing in. Make an indentation in the center using either a burger press, the bottom of a small measuring cup or a glass.
  • 3. To this, add 1 tbsp. onion per patty, 1 tbsp. pineapple per patty and 1 tbsp. grated cheese per as well. Season with more black pepper before adding teriyaki sauce.
  • 4. With the remaining ground beef, form 3 patties. Place each of them on top of the stuffed patties and shape them into a burger, making sure the edges are well sealed. Place them in a large plate and cover with plastic wrap before transferring them to the fridge for at least 1 hour.
  • 5. About 15 minutes before time is up, make the topping sauce. In a small bowl, add teriyaki sauce and Miracle Whip. Stir the ingredients very well until the mixture gets smooth and set aside until needed.
  • 6. Remove the burgers from the fridge, take the plastic wrap off and let them get to room temperature, about 30 minutes.
  • 7. Place burgers on the grates, close the lid and grill them between 450ºF/235ºC to 500ºF/260ºC for 6 to 7 minutes before flipping them. Cook the burger for an additional 6 to 7 minutes as well, basting the patties generously with the remaining teriyaki sauce. Place the pineapple rings on the barbecue before closing the lid.
  • 8. Three minutes later, flip the rings and let them cook until the burgers are ready. Also 3 minutes before time is up, place the hamburger buns on the top rack to toast before closing the lid.
  • 9. About 2 minutes before everything is done, place the cheese on each patty, close the lid again and let them melt nicely.
  • 10. To assemble the burger; place the patty on the hamburger bun followed by a pineapple ring and then, top generously with the teriyaki-Miracle Whip sauce. Serve immediately

1/2 cup teriyaki sauce (I use Kikkoman Terriyaki Baste and Glaze with honey and pineapple)
1 teaspoon Worcestershire sauce
1/2 teaspoon salt

1 (20 ounce) can pineapple rings, drained
2 -3 tablespoons additional teriyaki sauce
8 slices swiss cheese

Steps:

  • Preheat grill to medium-high heat.
  • Tear off a sheet of Reynolds Wrap Non-Stick Foil long enough to cover entire grill grate. Make drainage holes in the non-stick foil with a grilling fork; set aside.
  • Combine terriyaki sauce, Worcestershire sauce, ground beef, and salt and pepper in a large bowl until well blended.
  • Shape beef mixture into 8 burgers, 4 inches round and 1/2-inch thick.

  • Process 1/4 of the fish in food processor until smooth. Add onions and remaining fish; pulse just until finely chopped. Spoon into medium bowl.
  • Add bread crumbs; mix well. Shape into 12 (3-inch) patties.
  • Grill 3 min. on each side or until done, brushing with barbecue sauce for the last few minutes.

1/4 cup pickled ginger, chopped
1/4 cup cilantro, chopped

2 lbs boneless skinless yellowfin tuna fillets, finely chopped
1/2 cup panko breadcrumbs
1 egg, beaten
1/4 cup Dijon mustard
2 tablespoons minced garlic
2 tablespoons honey
1 1/2 tablespoons sesame oil
2 teaspoons kosher salt
1/2 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper
vegetable oil
6 hamburger buns with sesame seeds, split
1/2 cup bottled teriyaki sauce

Steps:

  • Prepare a medium-hot fire in a charcoal grill with a cover; or preheat a gas grill to medium-high.
  • Make the salsa: combine all the ingredients in a bowl; stir to mix; set aside to let flavors blend.
  • Make the patties: In a bowl, combine the tuna, panko, egg, mustard, garlic, honey, sesame oil, salt, pepper, and cayenne; mix well.
  • Divide mixture into 6 portions; form the portions into patties to fit the buns.
  • When the grill is ready, brush grill rack with vegetable oil.
  • Place the patties on the rack, cover, and cook, turning once, just until opaque throughout, about 4 minutes on each side.
  • During the last few minutes of cooking, place the buns, cut side down, on the outer edges of the rack to toast lightly.
  • Assemble the burgers: brush the cut sides of the buns with teriyaki sauce.
  • On each bun bottom, place a patty and an equal portion of the salsa; add bun tops and serve.

1 tsp ground ginger
1 tsp garlic powder
2 tsp low sodium soy sauce
2 lb lean ground beef
2 Tbsp pineapple juice(from canned pineapple)
2 Tbsp teriyaki sauce
4 slice red onions
4 slice swiss cheese
lettuce
mayo or miracle whip
4 large good buns your choice
4 slice pineapple(drain and reserve juices)

Steps:

  • 1. I start with a grilled beef burger with a Hawaiian kick Sauce topped with a pineapple. swiss cheese and red onions. How to Make them Preheat grill to medium-high. Mix pineapple juice and teriyaki sauce together. Set aside. Mix beef, ginger, garlic, salt and soy sauce in a small bowl. Divide into 4 patties and form into patties slightly larger than your bun. Make a little whole in the center of the burger to prevent it from doming up in the center. It will fill in as your burger cooks. Grill until golden brown and slightly charred (about 3-5 minutes), turning once (cook for 3 minutes on the other side for medium). Baste with pineapple teriyaki sauce as your burger cooks. Try not to press down on your burger with a spatula. It will cause the juices to escape and will create a dry burger! Grill pineapple slices until pineapple have golden brown grill marks on both sides. Toast hamburger buns by placing on grill until grill marks form, this wont take long Do not walk away during this process. Toast can turn to ash in the blink of an eye. Spread mayo on bottom bun. Top with lettuce, burger, Swiss cheese, grilled pineapple, red onion

1/2 cup mayonnaise
2 tablespoons teriyaki sauce
1 tablespoon honey
1/4 teaspoon cayenne pepper
8 canned pineapple rings
1 large red bell pepper, cut into rings
1 1/2 pounds ground beef
Kosher salt and freshly ground black pepper
Teriyaki sauce, as needed
4 slices provolone cheese
2 tablespoons butter
4 onion rolls, halved
1/2 red onion, thinly sliced
Green lettuce leaves, for topping

Steps:

  • For the sauce: Stir together the mayo, teriyaki sauce, honey and cayenne in a small bowl. Set aside.
  • For the burgers: Set a grill pan over medium-high heat (you can also use a skillet).
  • Grill the pineapple and bell pepper rings until they have great grill marks on both sides (or brown them in the hot skillet), about 5 minutes.
  • Season the ground beef and form it into 4 equal-size patties. Cook them over medium heat on the grill for 4 to 5 minutes on the first side, then flip them over and add a splash of teriyaki sauce on top of each one. Place a slice of cheese on each patty and let it melt while the burger cooks through, about 4 minutes longer.
  • Butter a griddle or separate skillet set over medium heat. Place the rolls cut-side down and cook until brown, about a minute.
  • Spoon a little bit of the sauce on both sides of the rolls and allow it to soak into the bread. Place the patties on the bottom buns and top each with 2 pineapple slices and some red onion slices, bell pepper rings and lettuce. Top with the top buns and smush it all together. Serve with extra sauce for dipping.

1 pounds ground beef
1 tablespoons worcestershire sauce
4 slices pineapple
12 units wholewheat dinner rolls
1 leaves lettuce leaves
1 units tropical bbq sauce
0.333333333333 cups bbq sauce
0.333333333333 cups pineapple preserves
1 tablespoons brown sugar

Steps:

  • 1. Adult help needed: ADJUST the oven rack so the surface of the broiler pan is about 4 inches from the broiler. TURN the oven to the broiler setting.
  • 2. PLACE the ground beef and Worcestershire sauce in a medium bowl. MIX lightly with a rubber spatula, but not too much. DIVIDE the beef mixture into 12 equal portions. SHAPE each portion into mini burgers about 1/2-inch thick. SET ASIDE on a baking sheet. WASH your hands thoroughly.
  • 3. To make the sauce, PLACE the barbeque sauce, pineapple preserves and brown sugar in a glass 1-cup measuring cup. STIR with a spoon to mix well.
  • 4. Adult help needed: PLACE the measuring cup in the microwave oven. MICROWAVE uncovered for 40 to 60 seconds or until hot. Careful! Measuring cup will be very hot! Using pot holders, STIR with a spoon. PLACE 1/3 cup of the sauce in a small bowl and SET ASIDE to serve with the cooked burgers. Use the remaining sauce for brushing in steps 5 and 6.
  • 5. Adult help needed: LAY the pineapple slices on the rack in the broiler pan. BRUSH with some of the remaining sauce. PLACE the broiler pan in the oven. BROIL 2 minutes. Careful! Broiler pan will be very hot! Using pot holders, REMOVE the broiler pan and TURN the pineapple slices over with metal tongs. BRUSH with more of the sauce. BROIL 2 minutes more. Using pot holders, REMOVE the broiler pan. PLACE pineapple slices on a plate and cover with aluminum foil to keep warm.
  • 6. Adult help needed: PLACE the burgers on the same broiler pan. PLACE the broiler pan in the oven. BROIL 4 minutes. Careful! Broiler pan will be very hot. Using pot holders, REMOVE the broiler pan and TURN the burgers over with a metal spatula. BROIL 3 to 4 minutes more, until the burgers are no longer pink in center and juices show no pink color. The burgers are done when a food thermometer stuck into the burgers reads 160 degrees. Using pot holders, REMOVE the broiler pan. BRUSH the burgers with the rest of the sauce.
  • 7. Adult help needed: While the burgers are cooking, use a sharp knife and cutting board to carefully SLICE the rolls in half. CUT each pineapple slice into 3 equal pieces. TEAR the lettuce leaves into smaller pieces to fit in the rolls.
  • 8. PLACE the sliced rolls on a serving platter. LAY some lettuce on the bottom of each roll. PUT a burger on top of the lettuce, then TOP the burger with a pineapple piece. PLACE the roll top on the pineapple and PRESS down slightly to hold the bun in place. SERVE with the sauce that was set aside in step 4.
