HAMBURGER-RICE SKILLET
I found this in Better Homes and Gardens Low-Cost Cooking cookbook. I've had the cookbook for about 25 years and only recently discovered this recipe. It's one of those recipes that I make just about anytime because I always have the ingredients on hand and my family (especially my youngest son) loves it!

Steps:
- In a skillet coated with spray oil, brown ground beef, onion, green pepper, and garlic until meat is browned. Drain off fat.
- Add rice; cook stirring constantly, for 2 minutes.
- Add remaining ingredients (except cheese).
- Bring to a boil, reduce heat.
- Cover and simmer for 25 to 30 minutes or until rice is tender, stirring occasionally.
- Remove cover, sprinkle with cheese, if desired. (We put the cheese on at the table.).

- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the water, carrots, celery and soup mix. Bring to a boil. Reduce heat; cover and simmer for 8 minutes or until vegetables are tender., Return to a boil. Add rice; cover. Remove from the heat; let stand for 5 minutes or until rice is tender.

- 1. Brown hamburger and drain fat. Set aside. Brown Rice A Roni according to package directions. Add water, per package; add cooked beef. Cover and simmer.
- 2. Serve with veggies and fruit.
HAMBURGER & RICE SKILLET MEAL
I have been making this and similar for years. The Subs that I noted make really great alternatives to change it up a notch. I especially like using sausage instead of Hamburger, it gives it a nice flavor.

- Cook hamburger
- Add Onion. (I saute this seperately in a bit of soy sauce).
- Add Soup, Soy Sauce, Sour Cream, and Water.
- Bring to just a boil, then reduce heat to low and add Peas and rice.
- Cover and cook 10 to 15 Minutes. (I didn't stir or lift the lid for 10 min and it came out just right.).
- Optional: Sprinkle grated cheese over the top just before serving.

- Cook first 3 ingredients in a large skillet over medium-high heat, stirring until beef crumbles and is no longer pink; drain.
- Stir in tomato and green chiles and next 4 ingredients.
- Cook, covered, over medium heat for 15 minutes, stirring occasionally.
- Uncover and cook 15 more minutes; remove from heat.
- Sprinkle lettuce and next 5 ingredients over hamburger mixture.
- Stand tortilla chips around edge of skillet.
- Serve with chips and salsa.
