This recipe is such a hit it's "traveled" all over the country! My mother originated the recipe in Pennsylvania...I brought it to Texas when I married...I'm still making it in California...and my daughter treats her friends to this "oldie" in Colorado.

2 pounds uncooked extra lean ground beef or ground round (90% lean)
4 pounds potatoes, peeled and sliced 1/4 inch thick
1 large onion, sliced
1/2 teaspoon pepper
1 low-sodium beef bouillon cube
1 cup hot water
1 can (28 ounces) diced tomatoes, undrained
Chopped fresh parsley, optional

Steps:

  • In a Dutch oven, layer half of the meat, potatoes and onion. Sprinkle with half of the salt and pepper. Repeat layers. Dissolve bouillon in water; pour over all. Top with tomatoes. , Cover and cook over medium heat for 45-50 minutes or until potatoes are tender. Garnish with parsley if desired.

One of the comfort foods from my days at home (thanks, Mom!!!), which I continue to make. Ground beef, potatoes, and kidney beans with a tomato soup and bacon topping make a very hearty and filling casserole, especially great in the cooler seasons.

1 ½ pounds ground beef
1 onion, finely chopped
2 ½ pounds potatoes, peeled and diced
1 (15 ounce) can kidney beans, undrained
salt and pepper to taste
1 (10.75 ounce) can condensed tomato soup
4 slices bacon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • In a skillet over medium heat, cook the ground beef and onion until the beef is evenly brown and the onion is tender. Remove from heat.
  • Layer 1/2 the potatoes in the bottom of the prepared baking dish, and cover with 1/2 the beef and onion mixture. Spread 1/2 the kidney beans and 1/2 their liquid over the beef and onion, and season with salt and pepper. Repeat the layers, and cover with the tomato soup. Top with the bacon.
  • Cover and bake 1 hour in the preheated oven. Remove cover and continue baking 1 hour, or until the bacon is crisp and the potatoes are tender.

This was an experimental recipe derived from Shepards Pie which turned out to be really delicious but it's also very rich so watch out.

Number Of Ingredients 11

1 lb ground chuck
1/4 teaspoon salt
3 large baked potatoes, peeled
1/2 lb sliced fresh mushrooms
1/4 cup butter
1/4-1/2 teaspoon garlic salt
1 cup sour cream
1/2 cup milk
1 (4 ounce) can corn (I prefer Green Giant Niblets)
1 (8 ounce) package mozzarella cheese
1 (8 ounce) package colby cheese

Steps:

  • Preheat oven to 350 degrees.
  • Brown Ground Chuck and drain.
  • Add salt and set aside.
  • Thinly slice Baked Potatoes and spread in a 9x11 inch shallow baking pan (prefferably glass).
  • Melt butter and Garlic Salt in a frying pan and add the Mushrooms.
  • Saute Mushrooms for 5 minutes or until they're tender.
  • In a small mixing bowl, mix Mushrooms, Sour Cream and Milk together and spread on top of Potatoes.
  • Open and drain Canned Corn and sprinkle on top of Sour Cream mixture.
  • Sprinkle Mozzarella Cheese on top of Corn.
  • Sprinkle Groud Chuck on top of Mozzarella.
  • Finish by sprinkling the Colby Cheese on top of Ground Chuck.
  • Bake at 350 for 30 minutes or until cheese is brown on top.
  • Variations: Omit the sauteed Mushrooms and substitute Mashed Potatoes for Baked Potatoes.

1 lb ground beef
1/2 bag of potatoes, cut into chunks
milk for consistency
flour to thicken
dash(es) salt and pepper
dash(es) parsley flakes
dash(es) dried onions
1/2 pkg shredded cheese

Steps:

  • 1. Brown beef, drain. Add desired milk to beef, add desired flour for thickening, add salt and pepper, dried onions,parsley flakes. Cover and cook on med. high until boiling, reduce heat to med. stirring occasionally. Cook until potatoes are done, top with cheese. Cover and melt cheese. Serve.

1 can Tomato Soup-Condensed
1 can Green Beans-Drained
Instant Mashed Potatoes
8 oz Shredded Cheddar Cheese

Steps:

  • Brown hamburger and onions and drain. Mix with soup, beans and salt and pepper. Put in a flat dish or casserole. Make up the mashed potatoes following recipe on the box and spread on top of the hamburger mixture. Spread cheese over the top of the potatoes and bake at 350 degrees for 30 minutes.

2 large potatoes, sliced
medium 2 to 3 carrots, sliced
1 can of peas, well drained
1 cup chopped onion
2 ribs of celery, sliced
Salt and pepper to taste
1 1/2 pounds lean ground beef, browned and drained
1 can condensed tomato soup
1 soup can of water

Steps:

  • Layer each of vegetables in order given in slow cooker. Season each layer with salt and pepper.
  • Put the browned ground beef on top of the celery. Mix the tomato soup with water and pour over the layers.
  • Cover and cook in slow cooker on low for 6 to 8 hours. Stir just before serving.
