Steps:
- Brush steaks with melted butter.
- Snip fat to prevent curling, and grill for 7-8 minutes each side.
- To make sauce, gently fry onions in remainder of butter until cooked.
- Remove from heat and stir in flour gradually.
- Add stock and return to heat.
- Add sugar and bring to the boil.
- Simmer gently for about 2 minutes to cook flour.
- If sauce seems a little thick, add more water.
- Add whiskey and season to taste.
- Place gammon steaks on a warmed serving platter and pour on sauce.

Steps:
- Brush the steaks with melted butter and grill or broil 7-8 minutes per side.
- Fry the onion in remaining butter.
- Remove onion from heat and stir in flour.
- Add the broth and return to the heat.
- When boiling, add sugar and simmer 2 minutes to cook the flour.
- Remove from the heat and add whiskey.
- Season to taste with salt and pepper and serve over ham.

- Heat butter in a 12-inch heavy skillet over high heat until foam subsides. Meanwhile, pat ham steak dry and sprinkle all over with 3/4 teaspoon pepper. Sauté, turning once, until browned in spots and heated through, 4 to 5 minutes total. Transfer ham to a platter.
- Add bourbon to skillet and carefully ignite with a kitchen match. When flames subside, add cream, mustard, and coffee powder (if using), scraping up any brown bits. Simmer until slightly thickened, 1 to 2 minutes. Pour some of sauce over ham and serve remainder on the side.

- 1. Heat grill.
- 2. In a medium sauce pan melt butter.
- 3. Brush ham steaks with butter-reserve the rest.
- 4. Saute onions in remainder of butter until cooked.
- 5. Remove from heat and whisk in flour gradually.
- 6. Slowly whisk in stock, return to heat.
- 7. Add sugar and bring to the boil.
- 8. Reduce heat and simmer for 3 minutes.
- 9. Add Whiskey and season with pepper.
- 10. If sauce is to thick, add a little bit more whiskey from your glass. Stop whining and just do it.
- 11. Take your glass and ham steaks to the grill.
- 12. Grill steaks for 3-4 minutes per side-you want nice golden grill marks, not grilled steak black grill marks.
- 13. Plate and serve with sauce.

- Cut crosswise slashes vertically and horizontally on ham, cutting through fat but not into the meat. Implant whole cloves where slashes intersect as deep as you can.
- Preheat the oven to 300 degrees F (150 degrees C). Line a large, heavy baking sheet with aluminum foil.
- Heat a saucepan over medium heat and add whiskey. Cook until reduced by 1/3 to boil out some of the alcohol taste, 15 to 20 minutes. Reduce heat to medium-low and add butter; stir until melted, 2 to 3 minutes. Stir in brown sugar and honey until mixture has a sauce-like consistency, 10 to 15 minutes more.
- Baste ham with glaze and place onto the prepared pan. Cover entire pan with more foil.
- Bake in the preheated oven for 1 hour, basting every 15 minutes with glaze and fat drippings from the pan and recovering with foil afterwards. Remove foil and continue baking until an instant-read thermometer inserted into the center of the ham reads at least 145 degrees F (63 degrees C), about 30 minutes more, basting twice during this period.
- Remove ham from the oven and tent foil to let juices settle back into meat, about 10 minutes. Reserve pan drippings. Trim off fat and skin and slice; set on a serving tray. Serve with pan juices.

- If there is any fat around the edges of the steaks cut into the edge or remove the fat.
- Melt 2 tbsp butter& brush both sides of the ham with it.
- Grill both sides of the ham steaks in a skillet for about 8 minutes each side (the time depends on the thickness of the steak).
- Meanwhile prepare the whiskey sauce in a saucepan.
- Add the onions to the saucepan with a 1 tbs butter and saute until translucent, use medium heat.
- Take the saucepan off the heat and whisk in the flour, graduallyy adding the water.
- Add brown sugar return to heat and bring the sauce to a boil.
- Reduce heat& simmer for 2 minutes.
- Add whiskey just before using it, season to taste with salt& pepper.
- Pour over the hot ham steaks and serve.
- You can add raisins to this suce if youwish.
