HAM AND PEAS FRITTATA
Stir Swiss cheese, ham and sweet peas into beaten eggs for a complete meal in one skillet.

- Preheat the oven to 400 degrees F.
- Whisk together the eggs, milk, 3/4 teaspoon salt and a couple turns of pepper in a large bowl. Add the peas, Swiss cheese and ham and stir to combine.
- Heat the oil in a medium ovensafe nonstick skillet over medium-high heat. Add the egg mixture and cook until the edges start to set, about 2 minutes. Transfer to the oven and bake until the center is set, 15 to 20 minutes. Let stand for 5 minutes before sliding carefully onto a serving plate and cutting into wedges.

- Trim off the skin of the ham and about 1/4 in. of fat. Score the surface of the ham, making diamond shapes 1/4 in. deep. Place the ham, fat side up, on a rack in a shallow roasting pan. Bake, uncovered, at 325° for 2 hours., Meanwhile, in a small saucepan, bring syrup to a boil. Reduce heat; simmer, uncovered, until reduced to 3/4 cup. Remove from the heat. Stir in the pecans, mustard, orange zest and allspice., Baste ham with some of the glaze; bake 30-60 minutes longer or until a thermometer reads 140°, basting occasionally with remaining glaze. Let stand for 15 minutes before slicing.

- Preheat the oven to 425 degrees F.
- Line a large baking sheet with parchment paper for quick clean up.
- Place the pita breads onto the baking sheet.
- Spread the tomato sauce evenly over the pitas.
- Top evenly with ham and the two cheeses.
- Season the pizza with salt, pepper and the oregano, if using.
- Drizzle with a little olive oil.
- Bake until the cheese is golden and bubbly, about 10 to 15 minutes.
- Cut into quarters and serve.
