HAM AND CHEESE CASSEROLE



Ham and Cheese Casserole image

Leftover ham and cheese casserole made with homemade condensed soup.

Number Of Ingredients 13

8 ounces rotini pasta
2 tablespoons unsalted butter
2 tablespoons flour
1/2 cup milk
1/2 cup cream, divided
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 1/2 cups leftover diced ham
1/3 cup sour cream
1 1/2 cups grated sharp cheddar, divided
2 scallions, sliced

Steps:

  • Preheat the oven to 375, and lightly butter an 8x8" oven-safe dish.
  • First, cook the rotini pasta in plenty of salted boiling water until al dente--about 1-2 minutes less than the package directions. Drain and set aside.
  • In a small saucepan, melt the butter over medium heat. Whisk in the flour, and cook for 1 minute until homogenous. Whisk constantly.
  • Next, stream in the milk, 1/4 cup of the cream, salt, pepper, onion powder, and garlic powder. Lower the heat and cook while stirring occasionally until slightly thickened. It will take about 5-8 minutes, and the mixture will coat the back of a spoon when it's properly thicken.
  • In a large bowl, combine the cooked pasta, cream sauce, sour cream, 1 cup of the grated cheddar, ham and the sliced scallions. Stir well to combine.
  • Pour the mixture into the prepared baking dish. Top with the remaining 1/2 cup of grated cheese. Drizzle the remaining 1/4 cup of heavy cream evenly over the mixture.
  • Cover with foil, and bake for 20 minutes. Remove the foil and bake uncovered for 5 minutes to slightly crisp up the cheese on top.
  • Let stand for 5 minutes before scooping and serving.

2 cups (8 ounces) finely shredded cheddar cheese
2 packages (2-1/2 ounces each) thinly sliced deli ham, chopped
3/4 cup mayonnaise
1/3 cup real bacon bits
2 to 3 teaspoons Dijon mustard
2 tubes (10.20 ounces each ) large refrigerated flaky biscuits

Steps:

  • In a large bowl, combine the cheese, ham, mayonnaise, bacon and mustard. Split biscuits into thirds. Press onto the bottom and up the sides of ungreased miniature muffin cups. Fill each with about 1 tablespoon of cheese mixture., Bake at 450° until cups are golden brown and cheese is melted, 9-11 minutes. Let stand for 2 minutes before removing from the pans. Serve warm.

4 large egg whites
2 tablespoons fat-free milk
1/4 teaspoon salt

2 eggs
3 cups Original Bisquick™ mix
1 cup milk
3 tablespoons vegetable oil
1 package (4 ounces) shredded Cheddar cheese (1 cup)
3/4 cup chopped fully cooked ham (1/4 pound)

Steps:

  • Heat oven to 400°F. Spray bottoms and sides of 12 regular-size muffin cups with cooking spray. (Spray will work better than greasing or using paper muffin liners.)
  • Beat eggs slightly in medium bowl with fork. Stir in Bisquick mix, milk and oil just until moistened. Stir in 3/4 cup of the cheese and the ham. Divide batter evenly among muffin cups. Sprinkle remaining 1/4 cup cheese evenly over tops of muffins.
  • Bake 18 to 20 minutes or until light golden brown. Immediately remove from pan. Serve warm. Wrap and refrigerate any remaining muffins.

2 cups water
1/2 cup sliced carrot
1/4 cup chopped onion

  • In a large saucepan, combine the potatoes, water, carrot and onion. Bring to a boil. Reduce heat; cover and cook until tender, 10-15 minutes. , Meanwhile, in another saucepan, melt butter. This ham and cheese casserole is very filling. It should be assembled and then refrigerated overnight. I usually make this Christmas Eve and serve it Christmas morning after we open our presents.

18 (1 ounce) slices white bread, cubed
8 ounces cooked ham, cubed
2 cups shredded Cheddar cheese
1 ½ cups diced Swiss cheese
6 eggs
3 ½ cups milk
½ teaspoon onion powder
2 cups crushed cornflakes cereal
½ cup butter, melted

Steps:

  • Lightly grease a 9x13 inch baking dish. Line the bottom of the dish with half the bread cubes. Sprinkle with ham, Cheddar cheese, and Swiss cheese, and top with remaining bread. In a bowl, beat together the eggs, milk, and onion powder. Pour evenly over bread. Cover, and refrigerate overnight.
  • Preheat oven to 375 degrees F (190 degrees C). In a small bowl, blend the crushed cornflakes and melted butter. Spread evenly over the casserole.
  • Bake 40 minutes in the preheated oven, or until bubbly and golden brown. Let stand 5 minutes before serving.
