Applesauce Spice Cake With Cream Cheese Icing (CL) image

A Cooking Light rescue of a high fat, high sugar recipe of a reader in 1998. This is the lightened recipe.

1 1/2 cups packed brown sugar
1/2 cup chilled light butter
1 1/2 cups chunky applesauce
1/4 cup apple butter
2 large egg whites
1 large egg
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup raisins
1/4 cup chopped pecans, toasted
1 cup cream cheese frosting (recipe follows)
1 1/2 teaspoons chilled light butter
0.5 (8 ounce) package reduced-fat cream cheese, chilled
2 cups sifted powdered sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350*.
  • Beat sugar and butter at medium speed of a mixer until well-blended (about 5 minutes). Add applesauce, apple butter, egg whites and egg; beat well.
  • Add flour and next 4 ingredients (flour through salt); beat well. Stir in raisins. Pour batter into a 13 x 9-inch baking pan coated with cooking spray.
  • Bake at 350* for 45 minutes or until a wooden pick inserted in center comes out clean. Cool completely on a wire rack.
  • Spread Cream Cheese Icing over cake and sprinkle with pecans.
  • Cream Cheese Icing directions: Beat butter and cheese at high speed of a mixer until fluffy. Add sugar; beat at low speed until well blended. Add vanilla; beat well. Yield: 1 cup.
