- Bring a large pan of water to the boil and cook the pasta following pack instructions, adding the broccoli florets to the pan for the final 4 mins. Drain and set aside.
- Meanwhile, make the sauce. Heat the oil in a large pan and cook the onion for 5 mins to soften, then stir in the garlic and cook for 1 min more. Stir in the ham, cream and mustard, then bring to the boil. Add the pasta and broccoli, then stir in the cheese, coating everything in the sauce.

- Preheat oven to 425 degrees.
- Cook pasta according to package directions, drain and set aside.
- Steam broccoli until fork tender. Chop into small pieces.
- Heat oil in a small skillet. Add onions and cook until soft, but now brown.
- Melt butter in a medium saucepan over medium heat. Add flour and cook 1 minute.
- Add broth and whisk constantly until mixture is smooth of lumps and thickened.
- Whisk in milk.
- Remove from heat.
- Add onions, thyme, parsley, salt, and pepper.
- In a large bowl, combine cooked pasta, ham, broccoli, and sauce.
- Transfer to a casserole dish sprayed with cooking spray.
- Melt butter in a small bowl.
- Add breadcrumbs and cheese to melted butter.
- Top with breadcrumb cheese mixture.
- Bake for 12 minutes until sauce is bubbly.

- Preheat oven to 425 degrees. On a rimmed baking sheet, toss broccoli, oil, 1/2 teaspoon salt, and 1/8 teaspoon pepper. Roast until broccoli is tender and lightly browned, 15 to 20 minutes, tossing halfway through. Meanwhile, in a large pot of boiling salted water, cook noodles until al dente. Reserve 2 cups pasta water; drain pasta.
- Return empty pasta pot to medium-low heat. Add cream cheese and 1 cup pasta water; whisk until smooth. Add broccoli and ham and cook until hot. Gently fold in noodles. Thin sauce to desired consistency with more pasta water and season pasta with salt and pepper.

I came up with this dish as I cleaned my freezer and pantry. Love one dish meals. You can susitute any protien, or eliminate for a nice easy side dish.

- 1. Prepare all your ingredients. Grill your ham steaks, few minutes each side, making nice grill marks.

I whipped this up as a slightly healthier baked mac and cheese that acts as a whole meal. I've used canadian bacon or ham for this recipe, but that is easily subbed for veggies for a comforting veggy meal.

- Cook your pasta slightly less than al dente, drain and rinse with cold water.
- Melt butter in a pan and sprinkle in flour. Cook for about two minutes then add milk and whisk to combine.
- Cook milk mixture (bechamel) on medium low for about 5 minutes until the sauce has thickened and is bubbly. The sauce should have reduced slightly as well. If the sauce is too thick add more milk.
- Add Monterey jack, Parmesan, mustard, salt and pepper to bechamel. Combine while cheese melts and taste and reseason if necessary (remember it's less salty after combining with the pasta and veggies).
- Mix pasta, veggies and meat (if using) into the cheese sauce. Pour half of the mixture into an oven-proof container and sprinkle with 1/4 cup shredded cheddar. Layer the other half of mixture and then sprinkle bread crumbs and then cheese on top.
- Bake at 350 for 30 minutes or until cheese on top is melted and casserole is bubbly.

CHEESY HAM & BROCCOLI PASTA CASSEROLE
Rich, warm and comforting all in one dish. It's not hard to make and this recipe makes enough for about 6 servings. Mix up the cheeses you use and even add some extra spices that you enjoy to give it a little extra oomph. We like to have this with a little green salad. I hope you enjoy this dish.

- Preheat oven to 350°F. Lightly spray a baking dish - I like to use my 7" x 11" rectangle.
- Fill a large pot with water and bring to a boil. Drop in the bow tie pasta and cook until just barely al dente. Once is it cooked, drain well and give it a quick rinse then set aside.
- Cut the broccoli florets into smallish bite size pieces. Steam until crisp tender then drain well and set aside.
- While the pasta and broccoli are cooking, cut the ham or smoked sausage into bite size pieces and set aside.
- Melt butter in large saucepan over low heat until melted. Whisk in the flour and stirring constantly, cook for about 3 minutes. Whisk the milk in about half at a time. Bring to a high simmer over medium low heat. Stir constantly for about 3 or 4 minutes until it is thickened.
- Add cheeses slowly and continue to cook over low heat while whisking until all of the cheese has melted and you have a smooth sauce.
- Add the pasta and meat. Stir gently to coat. Add the steamed broccoli and gently stir to coat.
- Spoon the pasta mixture into your prepared baking dish. Top with salt and pepper to taste then a thin layer of crushed butter crackers topped with canned onion rings.
- Bake - uncovered - for about 20 or 25 minutes or until bubbly. Allow it to sit for about 5 minutes before serving.
PASTA WITH BROCCOLI & COUNTRY HAM
Steps:
- Bring 2-3 quarts lightly salted water to boil. Cook Broccoli until tender, but still crisp. Remove broccoli from boiling water and place in ice water bath to stop cooking process. DO NOT THROW AWAY WATER!!! Bring water back to boil and add pasta. Cook till tender. While pasta is cooking, heat oil in large skillet over medium heat. Add country ham and cook till hot (do not over cook ham it will become hard and salty). Add garlic, broccoli, red pepper flakes. Cook till broccoli is hot. Add salt and pepper to taste (remember country ham is sometimes salty). Remove pasta from boiling water (DO NOT THROW AWAY WATER YET!) and add to skillet and mix together. If mixture is dry, add some of the pasta water to keep moist and to stop sticking, but not watery. Add gouda and heat till melting, then add shredded Mozzarella and mix till melted. Add pasta water if mixture becomes dry after sheese is added. Remove from heat and add parsley and mix. Top with Parmesan cheese and serve.
