How to make Beef Enchilada Soup {Slow Cooker}

Number Of Ingredients 10

1 lb beef stew meat
28 oz can red enchilada sauce
10 3/4 oz can Condensed Cheese Soup (can use Fiesta Cheese Soup)
15 oz can black beans, drained
11 oz can whole kernel corn, drained
2 cups beef broth
1 tsp dried oregano
1 cup shredded cheese
Optional Toppings: extra cheese, sour cream, crushed tortilla chips

Steps:

  • Place all ingredients, except toppings, in slow cooker. Cover and cook on low for 8-10 hours. Serve with optional toppings, if desired.
  • Freezer Meal Option: Place all ingredients, except toppings, in a gallon freezer bag. Freezer. When ready to cook, remove frozen contents from freezer bag and place in slow cooker. Cook on LOW for 8-10 hours.
