1 mango - peeled, seeded and diced
1 teaspoon extra virgin olive oil
½ red bell pepper, chopped
2 green onion, thinly sliced
1 tablespoon chopped cilantro
1 lime, juiced
¼ teaspoon salt
1 pinch cracked black pepper
1 teaspoon honey

Steps:

  • Combine the mango, oil, bell pepper, scallions, cilantro, and lime juice in small bowl. Stir to combine. Season to taste with salt, black pepper, and honey. Refrigerate, or serve immediately.

Go to Mexico and you will find vendors, either with carts in the city or baskets on the beaches, selling cups of fresh fruit and vegetables served up with a squeeze of lime, a sprinkling of salt and a dash of chile powder. The combination may seem odd at first to the North American palate but the combination of sweet, sour, salty and spicy flavors is addictive. Grilling the mango intensifies its natural honeyed sweetness, adding another dimension to an already simple but powerful play of flavors.

4 ripe mangoes
2 tablespoons canola oil
Juice of 1 lime
1 teaspoon fine sea salt
1/4 teaspoon ancho or New Mexican chile powder
Finely grated zest of 1 lime
Fresh cilantro leaves, for garnish, optional

Steps:

  • Heat the grill to medium for direct grilling. Slice the mangoes in 2 pieces from the pit. Score the flesh of the mangoes in a diamond pattern, taking care not to cut into the skin. Pop the flesh by holding the skin side and pushing up. Brush the flesh with the oil and grill, cut-side down, until slightly charred, about 1 minute.
  • Transfer the mangoes to a platter and immediately drizzle with the lime juice and sprinkle with the salt, chile powder and lime zest. Garnish with cilantro leaves if desired.

1 cucumber, diced with seeds removed
2 chili peppers, green, cut into rings
1/4 cup of fresh mint, chopped
1 medium green bell pepper, diced
1 medium onion, minced
1/4 cup malt vinegar
2 tablespoons chili-garlic sauce

Steps:

  • In bowl, combine mango, red bell pepper, cucumber, green chilies, mint, green bell pepper, onions, malt vinegar and Garlic Chili Pepper Sauce.
  • Blend together well.
  • Cover and refrigerate for at least one hour.

4 cups chopped seeded, peeled mangoes (about 8 small)
3 cups chopped cored, peeled pineapple (about 1 medium)
1/2 cup diced sweet green pepper
1/2 cup diced sweet red pepper
1/4 cup diced red onion
1/4 cup cider vinegar
1/4 cup lemon juice
1/4 cup pineapple juice
1 tablespoon sugar
2 teaspoons cinnamon
1/4 teaspoon ginger

Steps:

  • Prepare jars, lids and bands.
  • Combine all ingredients in a large saucepot. Bring to a boil. Reduce heat and simmer 20 minutes, stirring frequently.

1 pound mango, ripe, peeled, pitted, and cut into 1/2-inch dice (about 2 cups)
1 to 4 scotch bonnet chiles, or more, if you can bear it, stemmed
4 cloves garlic, crushed
2 teaspoons salt, or more to taste
2 teaspoons sugar
1/3 cup lime juice, fresh, or more to taste
2 to 4 tablespoons water

Steps:

  • Combine the mangoes, chile, garlic, 2 teaspoons salt, the sugar, 1/3 cup lime juice, and 2 tablespoons water in a blender and purée until smooth. Add more water as needed to obtain a thick but pourable sauce. Correct the seasoning, adding more salt or lime juice as necessary. The relish will keep, tightly covered in the refrigerator, for up to 1 week.Makes about 2 cups enough to serve 8
