GULF COAST SHRIMP DIP
This recipe is from a cousin in Philadelphia, MS. It's good whether you are having company or it's just you and a friend. Have plenty of crackers on hand.

Steps:
- 1. Finely chop shrimp and set aside.
- 2. Chop fresh parsley and celery. Mince green onions.
- 3. Combine cream cheese, mayonnaise, and chili sauce in a bowl.
- 4. Add the green onions and the rest of the ingredients except for the shrimp.
- 5. Stir well before adding shrimp.
- 6. Chill several hours before serving.
HOT CREOLE SHRIMP DIP
I came across a recipe for hot crawfish dip, and it sounded delicious, but we don't have a lot of crawfish available in my area. However, I'm a big fan of shrimp, so I used that instead. This Creole shrimp dip has become a family favorite. You can increase the heat with your favorite hot sauce or add a bit of acidity with a squeeze of lemon. -Jill Burwell, Renton, Washington

Steps:
- In a Dutch oven, melt butter over medium heat. Add green onions and green pepper; cook and stir until tender, 3-4 minutes. Add shrimp, pimientos, garlic and Creole seasoning. Cook and stir until heated through. , Stir in cream cheese until melted; sprinkle with parsley. Serve with baguette slices or crackers.
