This Slow Cooker Guinness Corned Beef is a simple one dish meal full of flavor and oh so easy! Tender corned beef, carrots, potatoes, and cabbage all cooked in one crockpot!

1 (3½ pound) (1.5kg) corned beef brisket
2 pounds (1kg) Yukon gold potatoes ((or whatever you have on hand) scrubbed well and cut into large chunks)
20 baby carrots
1 (12 oz) (355ml) Guinness stout (or can use about 2 cups beef broth)
¼ cup (50g) packed brown sugar
Seasoning packet that came with corned beef
1 small head of cabbage

Steps:

  • Trim the corned beef of all visible fat if desired. Place in the bottom of the slow cooker. Sprinkle with brown sugar and seasoning packet. Pour Guinness around the corned beef then place the potatoes and carrots around the corned beef. Cover and cook on low 8-10 hours. NO PEEKING! I don't recommend cooking on high.
  • Remove outer leaves from cabbage and cut into 4 wedges. Place in crock pot around the beef. Return lid and cook for 20 minutes. This will give you tender crisp cabbage. If you like softer cabbage put in earlier.

2 pounds red potatoes, quartered
1 pound carrots, cut into 3-inch pieces
2 celery ribs, cut into 3-inch pieces
1 small onion, quartered
1 corned beef brisket with spice packet (3 to 3-1/2 pounds)
8 whole cloves
6 whole peppercorns
1 bay leaf
1 bottle (12 ounces) Guinness stout or reduced-sodium beef broth
1/2 small head cabbage, thinly sliced
Prepared horseradish

Steps:

  • In a 6-qt. slow cooker, combine potatoes, carrots, celery and onion. Add corned beef (discard spice packet or save for another use)., Place cloves, peppercorns and bay leaf on a double thickness of cheesecloth. Gather corners of cloth to enclose seasonings; tie securely with string. Place in slow cooker. Pour stout over top., Cook, covered, on low 8-10 hours or until meat and vegetables are tender, adding cabbage during the last hour of cooking. Discard spice bag., Cut beef diagonally across the grain into thin slices. Serve beef with vegetables and horseradish.

This corned beef can be made through the night or day before then topped with Recipe #57813 the day of serving. I kept this simple so I can use Recipe #57813 to Accompanying this Menu #14836 menu.

4 lbs corned beef brisket, Flat cut with seasoning packet
2 onions, peeled and cut into eights
15 ounces Guinness stout
2 cups water

Steps:

  • Remove excess fat from corned beef.
  • Place onions in a crock pot then brisket with season packet on top of onions.
  • Pour beer and water over place lid on.
  • Set crock pot on low for 6 hours.
  • Place cabbage on and cook on high for 1-2 more hours.
  • Remove meat carefully. It is very tender and can fall apart easily.
  • Slice any excess fat. It should slide right off.
  • Then Proceed with Recipe #57813 if desired.
  • Serve with cabbage, onions and your favorite Irish sides. Do check the menu above.

2-3 lb flat cut corned beef (with spice package)
1 lb baby red or white potatoes (tiny ones, or quarter larger ones)
1/2 lb peeled baby carrots
2 clove garlic, peeled and halved
1 bay leaf
1 bottle (12 oz) guinness stout
1/2 head green cabbage, optional (see note)

Steps:

  • 1. Coat slow cooker liner with non-stick cooking spray. Place corned beef in slow cooker. Sprinkle contents of seasoning packet over meat.
  • 2. Add potatoes, carrots, garlic and bay leaf on top of meat. Pour the beer over all.
  • 3. Cover slow cooker and cook on low for 8 hours.
  • 4. When cook time is done, remove meat to cutting board Slice against grain to serve. Serve with vegies.
  • 5. NOTE: If you want cabbage, it can be cooked separately on stove top (my preferred method) or added in slices to the slow cooker during the last 10-60 minutes of cook time.

4 carrots, peeled and chopped into 2-3" chunks (or a bunch of baby carrots...)
6-8 small-medium size red potatoes (unpeeled) (or a bag of really tiny multicolor potatoes..)
1 large yellow onion, rough chopped
2-3 lb corned beef brisket with seasoning packet
2 14.9 ounce cans of Guinness Pub Draught stout (you can use Boddingtons, if you are faint of heart...)
4 Tablespoons Grey Poupon mustard (reserve one tablespoon)
3/4 cup brown sugar
1 Tablespoon Worcestershire sauce
1 tsp horseradish
1/2 tsp salt
1/2 tsp pepper
1/2 cup honey
( Optional: Cabbage)

Steps:

  • Rinse the corned beef under cold water and pat dry. Save the seasoning packet if it has one. Place the corned beef, fat side down in a 6 quart crock pot. In a small bowl, mix the mustard and contents of the seasoning packet together. Spread the mustard mixture all over the top of the corned beef. Add the onions and carrots and potatoes around the beef. Mix the brown sugar with one can of Guinness. Pour the beer around the beef. Add enough beer to cover. Drink the remaining beer. Cook on low for 8 hours. Remove the lid and add the cabbage wedges. (or not. Ick) Cook for 1 more hour. Remove the meat from the crock pot and set aside. Place a tent foil on top. Using a slotted spoon, scoop out the veggies and place in a bowl. Place a sieve over a medium pot and strain the juices into the pot. Place the pot over high heat. Bring to a boil, add in the horseradish, salt, pepper, mustard, honey and mix. Reduce the heat to a simmer to reduce the sauce by half. ~35 minutes. Slice the meat against the grain and serve with the glaze and the veggies. NOTES: I usually use baby carrots, and leave them whole or split them in half. The potatoes I have found I like to cut in halves or quarters, about 1" chunks, coat them with a mix of flour and seasonings and brown them lightly in butter before adding them. This leaves them a bit distinct in flavor, and firmer.
