Number Of Ingredients 6

2 cups dried peas
1 quart water
3 tablespoons butter
3 tablespoons flour
2 teaspoons salt (or more)
1 teaspoon sugar

Steps:

  • Rinse the peas well and pick out any foreign objects.
  • Place in water to soak overnight in a cool place.
  • Let them simmer in the water they were soaked in, approximately 1 1/2 to 2 hours.
  • Mix the flour with the butter and add to the peas and let simmer about 10 minutes longer.
  • Add salt and sugar to taste.
  • Please Note: * If you wish, you may add a peeled or diced carrot to the peas during the last 1/2 hour of cooking.
  • No sugar is needed if you add a carrot.

1 package (10 ounces) frozen peas
1 tablespoon butter
1 tablespoon all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup whole milk
1 teaspoon sugar

Steps:

  • Cook peas according to package directions. Meanwhile, in a small saucepan, melt the butter. Stir in the flour, salt and pepper until blended; gradually add milk and sugar. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Drain peas; stir into the sauce and heat through.

1 lb fresh green peas
1/2 cup salt water
1/4 cup butter
1/2 teaspoon sugar
salt and pepper
1 dash nutmeg
1 cup heavy cream
2 tablespoons flour
1 teaspoon fresh minced parsley

Steps:

  • Boil water in a medium sauce pan, and add peas, allowing to cook about 5 minutes Drain peas, and saute with butter and sugar until peas are good and tender (about 10 minutes).
  • In a small mixing bowl, mix cream together with flour until smooth.
  • Add to peas along with salt, pepper, nutmeg, and parsley.
  • Allow this all to simmer about 5 minutes before serving.

Yield Makes 4 to 6 servings

3 cups fresh peas (shelled from 3 to 6 pounds peas in pods) or thawed frozen peas (1 pound)
2 tablespoons sugar
1/2 cup heavy cream
2 tablespoons unsalted butter
1 tablespoon finely chopped chervil, chives, or mint

Steps:

  • Bring a large heavy saucepan of salted water (4 teaspoons salt for 2 quarts water) to a rolling boil, then slowly add peas so water maintains a boil. Stir in sugar and cook peas, uncovered, until tender, 5 to 12 minutes, depending on size of peas.
  • Drain peas in a colander.
  • Boil cream in saucepan until reduced by half, 2 to 3 minutes. Add butter, peas, 1/4 teaspoon pepper, and salt to taste and cook over medium heat, stirring, until butter is melted and peas are warmed through. Stir in chervil.
