Cameron's Ground Turkey Salsa Ranchera for Tacos and Burritos image

It doesn't get much easier than this -- lean ground turkey and salsa ranchera combined and made in a pressure cooker such as Instant Pot®. Perfect for tacos, burritos, or even a taco salad.

1 teaspoon canola oil
1 ¼ pounds lean ground turkey
1 (7 ounce) can salsa ranchera (such as HERDEZ®)

Steps:

  • Heat oil in a multi-functional pressure cooker (such as Instant Pot®) on the Saute setting. Add ground turkey; cook and stir until mostly browned, about 5 minutes. Add salsa ranchera and stir to combine.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid.

So simple it shouldn't really be a recipe, but for years I never thought of using salsa instead of those salty taco mix packets. Much tastier and more "real food" flavor and yet just as easy! This salsa idea stolen from my sister (Lowfat Linda), or possibly her husband, who didn't think to post it first. :-)

Number Of Ingredients 8

1 lb ground turkey
8 ounces salsa (my new favorite is Brad's Organic mild)
15 taco shells (hard) or 8 whole wheat tortillas (also Stop and Shop's Nature's Promise)
6 ounces cheese, shredded (reduced fat and sodium if you've got it)
2 tomatoes, fresh
10 leaves lettuce
10 tablespoons low-fat sour cream
1 avocado

Steps:

  • Fry ground turkey over medium heat with salsa, chopping up well with spatula.
  • Chop tomatoes, lettuce well.
  • Warm taco shells and fill with meat, cheese, tomatoes, lettuce and top with sour cream or avocado.
  • Or warm tortillas in frying pan (or microwave) with shredded cheese and add ingredients and roll up.
