MOUSSE AU CHOCOLAT image

150 g Semi or Bittersweet chocolate
1 gelatin leaf
375 ml Heavy Cream
75 g Granulated Sugar
1 Egg
1 Yolk

Steps:

  • 1. Melt chocolate while soaking gelatin in cold water. 2. Whip cream into soft peaks and chill 3. Prepare pate a bombe with the sugar and eggs. 4. Add chocolate and gelatin. 5. Fold in whipped cream when mixture has cooled but not set.
