CHICKEN AND POTATOES SANTA FE image

Number Of Ingredients 5

10 ounces potatoes cut in 3/4" cubes
1 tablespoon olive oil
10 ounces boneless, skinless chicken breasts cut in 3/4" cubes
1 cup frozen corn defrosted
1 cup salsa

Steps:

  • Zap the the potatoes in the microwave until they are just cooked through (about 4 minutes on 90% power). Be sure not to cook them too much. Meanwhile, heat oil over medium hight heat in a large skillet. Add chicken to skillet and brown. Drain water from potatoes and add to skillet. Continue to cook until potatoes are browned and chicken is cooked through. Turn heat down, add corn and salsa and cook until just heated through.
