BARBECUE TURKEY WINGS
This smoky turkey wings recipe includes a barbecue sauce with garlic, paprika, green onions and soy sauce. I wanted to recreate a recipe I had at a restaurant, so I came up with this zesty combination. Dare I say, it'll be your favorite turkey wing recipe? -Francis Mitchell, Brooklyn, New York

- Cut turkey wings into sections; discard wing tips. In a large shallow dish, combine remaining ingredients; add wing sections. Turn to coat; refrigerate, covered, 6-8 hours or overnight., Preheat oven to 350°. Drain and discard marinade from wings. Place wings in a greased 15x10x1-in. baking pan. Bake, uncovered, 50-60 minutes or until a thermometer reads 170° and turkey is tender.

GRILLED TURKEY WINGS

Steps:
- Place the turkey wings in a pot, cover with the water and bring to a boil. Cover the pan with a lid and boil the wings gently for 15 minutes, then set them aside in the broth until ready to grill.
- To make the grilling sauce, mix together all the remaining ingredients and set side. You should have about 1/2 cup.
- When ready to grill, remove the wings from the broth (freezing the stock for future use in soup or stew), place them on a grill (preferably with a cover) over medium-high to high heat, cover and grill for about 12 minutes. Turn the wings over (the underside should be nicely browned) and brush them with the sauce. Grill, covered, for another 12 minutes. Turn again, brush with the sauce, and grill for another 5 minutes. The wings should be well browned on all sides.
- Arrange the wings on a serving platter, brush with the leftover grilling sauce, and either serve immediately or cool to lukewarm before serving.

GRILLED TURKEY

Steps:
- Dissolve the salt and sugar in 2 gallons cold water in a large (at least 16 quart) stockpot or a clean bucket. (You can also add fresh herbs like rosemary, thyme or bay leaf, or aromatics like onions and garlic.) Add the turkey, cover and refrigerate, or set in a very cold place (that stays somewhere between 32 to 40 degrees F) for at least 12 hours and up to 24 hours.
- Remove the turkey from the brine 1 hour before grilling. Rinse well under cold water and pat dry to remove the salt.
- Prepare a charcoal grill for indirect grilling. The temperature inside the grill should be 350 degrees F.
- Place the turkey on the grill, cover and grill until an instant-read thermometer inserted in the thigh registers 175 degrees F, 2 hours 15 minutes to 2 1/2 hours. Let the turkey rest 1 hour before carving.
WARMDADDY'S BRAISED TURKEY WINGS
Steps:
- Preheat the oven to 325 degrees F.
- Mix together the Worcestershire, Cajun seasoning, garlic, sage, thyme and salt. Rub the mixture over the turkey wings.
- Spread the celery and onions in the bottom of a nonstick baking dish. Place the turkey wings on top and pour over the chicken broth. Cover tightly with foil and transfer to the oven for 1 hour 30 minutes, then uncover and roast for 15 minutes longer to brown.
THE GREATEST GRILLED TURKEY
Although not very traditional, grilling turkey is the best way of cooking it -- it comes out tender and juicy every time! The turkey drippings may be used to prepare a gravy by placing a metal pan under the turkey inside the roasting pan, and mixing in about 1/2 cup water, adding more water as necessary to prevent the drippings from scorching. Remove the pan about 30 minutes before the turkey is done cooking.

- Prepare an outdoor grill for indirect medium-high heat.
- Rinse turkey and pat dry. Turn wings back to hold neck skin in place. Return legs to tucked position. Brush turkey with oil. Season inside and out with Italian seasonings, salt, and pepper.
- Place turkey, breast side up, on a metal grate inside a large roasting pan. Arrange pan on the prepared grill. Grill 2 to 3 hours, to an internal thigh temperature of 180 degrees F (85 degrees C). Remove turkey from grill and let stand 15 minutes before carving.
