SPICY GRILLED POTATO PLANKS

These "spudtastic" spuds take the spotlight away from plain ol' French fries!

Number Of Ingredients 6

3 medium potatoes (1 1/2 pounds)
1/3 cup butter or margarine
1/2 teaspoon salt
1/8 teaspoon ground red pepper (cayenne)
1/8 teaspoon garam masala, if desired
1 large garlic clove, finely chopped

Steps:

  • Place potatoes in enough water to cover (salted if desired) in 3-quart saucepan. Cover and heat to boiling. Boil about 15 minutes or until almost tender; drain. Cool slightly.
  • Heat coals or gas grill for direct heat.
  • Heat remaining ingredients to boiling; remove from heat. Cut each potato lengthwise into 4 or 5 slices. Brush potatoes generously with butter mixture.
  • Cover and grill potatoes 4 inches from medium heat about 20 minutes, turning and brushing 2 or 3 times with butter mixture, until golden brown and tender.

3 T olive oil
1 clove garlic, minced
2 t finely chopped fresh rosemary leaves
1/4 t salt
1-1/2 pounds (about 3 large) unpeeled baking potatoes, cut into 1/2 inch thick slices

Steps:

  • Preheat grill. Combine oil, garlic, rosemary & salt in dish. Add potato slices and turn until well coated. Grill potatoes for 8 minutes or until soft. Turn and continue grilling 10 minutes longer or until cooked through.

1 T MINCED GARLIC (3 CLOVES)
3/4 TSP GROUND CUMIN
1/2 TSP SALT
1/4 TSP PEPPER
2 T RED WINE OR CIDER VINEAGAR
1 LB CUBE STEAKS (ABOUT 4)
1 1/2 LB POTATOES (3 LARGE), SCUBBED AND CUT IN 1/2 INCH LENGTHWISE SLICES
1 RED PEPPER HALVED LENGTHWISE
2 CUBANELLE PEPPERS HALVED LENGTHWISE

Steps:

  • 1. WISK OIL GARLIC CUMIN SALT & PEPPER IN BOWL, REMOVE 4 T TO LARGE ZIP LOCK BAG. ADD VINEGAR AND STEAKS. MARINATE 15 MIN AT ROOM TEMPERATURE OR AT LEAST 2 HOURS IN REFRIGERATOR. 2. POUR REMAINING OIL MIXTURE IN ZIP LOCK BAG, ADD POTATO SLICES AND PEPPER HALVES. SHAKE TO COAT WITH MARINATE. REFRIGERATE 1 HOUR. 3. HEAT OUTDOOR GRILL OR STOVETOP GRILL PAN. REMOVE POTATOES & PEPPERS HALVES. GRILL POTATOES 18 MINUTES TURNING ONCE. GRILL PEPPERS 8 MINUTES TURNING ONCE. SLICE PEPPERS INTO STRIPS, TOSS WITH REMAINING MARINADE. 4. REMOVE STEAKS FROM BAG (DISCARD REMAINING MARINADE) GRILL STEAKS 3 MINUTES TURNING ONCE. SPOON PEPPERS ON TOP OF STEAKS. SERVE WITH POTATO PLANKS.
