NAAN PESTO PIZZA RECIPE

This Naan Pizza Recipe makes two personal naan pizzas and is ready in just 15 minutes.

2 pieces Naan Bread
½ cup Basil Pesto
⅔ cup Shredded Mozzarella Cheese
½ cup Spinach (sliced into ribbons)
¾ cup Grape Tomatoes (halved)
Salt and Pepper (to taste)

Steps:

  • Preheat oven to 400F.
  • Place the naan bread on a parchment-lined baking sheet.
  • Spread the pesto on, leaving about an inch of room towards the edges. Sprinkle cheese and top with spinach.
  • Cut grape tomatoes in half and place them on top. Sprinkle lightly with salt and pepper.
  • Bake 10 to 12 minutes, or until cheese has melted and naan crust has browned.

Grilled Sweet Peppers with Goat Cheese and Herbs image

1 pound mini sweet peppers, stemmed, seeded and cut in half lengthwise
1 tablespoon extra-virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon smoked paprika
One 4-ounce package goat cheese
3/4 teaspoon finely chopped fresh rosemary
1/2 teaspoon finely chopped fresh thyme

Steps:

  • Preheat a grill to 350 to 400 degrees F, or medium-high heat.
  • Place the peppers in a large mixing bowl and drizzle with the olive oil. Toss with the salt, pepper and paprika.
  • Grill the peppers, without the grill lid and turning often, until just slightly softened, 2 to 3 minutes.
  • Spoon the goat cheese evenly into the pepper halves. Sprinkle with the rosemary and thyme.

2 1/2 cups green or red grapes, halved
1 tablespoon finely chopped rosemary
3 tablespoons extra-virgin olive oil
1 pound store-bought pizza dough
8 ounces soft goat cheese

Steps:

  • 1. Preheat a gas or charcoal grill to medium, or the oven to 450° F.
  • 2. Toss together the grapes, rosemary, and 1 tablespoon of the olive oil; set aside.
  • 3. Divide the dough into thirds and stretch each portion into a 10-inch circle.
  • 4. Place the rounds on the grill or in the oven until cooked through, about 6 minutes, flipping each halfway through if using a grill.
  • 5. Distribute the grapes, spoonfuls of the goat cheese, and the remaining olive oil on the pizzas.

2 Naan breads
½ cup pizza sauce
1 cup shredded mozzarella cheese ((or 8 oz fresh mozzarella, sliced))
1 cup Veggie Pulled Pork ((or toppings of your choice))
4-6 tablespoons barbecue sauce ((or skip if not making a BBQ pizza))
2 tablespoons fresh herbs (, such as oregano or basil)

Steps:

  • Preheat your grill to about 375 - 400F (see notes).
  • Assemble the pizzas by topping each naan bread with half the toppings, and carefully place on the grill.
  • Cover the grill, and cook for about 10 minutes at about 375-400 F, or until the cheese melts and the naan bread is crispy - check on the pizza to make sure the bottom does not burn if you have direct fire touching the naan. Remove from the grill and garnish with the remaining fresh herbs. Serve immediately.

6 to 8 grape leaves (sold in a jar), drained, rinsed and patted dry
1 3/4-to-1-pound round piece goat cheese, such as bucheron, at room temperature (or 2 smaller pieces, stacked)
1/4 cup extra-virgin olive oil, plus more for brushing
2 sprigs fresh rosemary
Pinch of red pepper flakes
Kosher salt
Crusty bread, for serving

Steps:

  • Preheat a grill to medium high. Wrap the grape leaves around the cheese to cover it completely; tie with kitchen twine.
  • Brush the wrapped cheese with olive oil and grill, turning once, until the leaves begin to char and the cheese is soft, 5 to 8 minutes.
  • Meanwhile, mix 1/4 cup olive oil, the rosemary, red pepper flakes and salt to taste in a bowl. Transfer the warm cheese to a serving plate, pour the oil on top and remove the twine. Serve with bread.

Grilled Grape and Goat Cheese Naan Pizza image

1 cup Balsamic vinegar
1 bunch Red, seedless grapes
2 pieces Naan bread
6 ounces Goat cheese, crumbled
1/2 cup Arugula
1/4 cup Walnuts, chopped & toasted
2 tablespoons Olive oil

Steps:

  • Pour balsamic vinegar into a small saucepan. Bring to a boil and reduce to a simmer. Simmer until it is reduced to about 1/4 cup, 10-15 minutes. Remove from heat and cool.
  • Turn grill to high, close the cover and preheat for 10 minutes. Then reduce heat to medium-low heat. Lightly oil grates.
  • Split grapes into 2 smaller bunches, and grill for 2 minutes on each side or until grapes begin to soften.
  • Remove grapes from the grill and cool for 5 minutes. Then remove grapes from stems.
  • Place naan bread pieces on grill and warm each side for about 1 minute.
  • Remove naan from grill and top each with half of the goat cheese. Then drizzle each with 1 tablespoon olive oil. Add the grilled grapes.
  • Return the pizzas to the grill, close the lid and cook for about 5 minutes, until the goat cheese is melted.
  • Remove from grill and drizzle with balsamic reduction.
  • Add sprigs of arugula and chopped walnuts. Slice pizzas and serve immediately.
