4 ears corn, husks removed
2 tablespoons canola oil
1/2 cup vegan mayonnaise or regular mayonnaise
2 tablespoons Sriracha
2 tablespoons lime juice
1 teaspoon chili powder, plus additional for garnish
2 to 4 tablespoons chopped fresh cilantro, optional

Steps:

  • Preheat a grill to medium-high heat.
  • Coat the corn evenly with the oil. Grill the corn, turning so that it cooks evenly and grill marks form, 10 to 12 minutes.
  • Mix together the mayonnaise, Sriracha, lime juice and chili powder until smooth.
  • Coat the corn with the mayonnaise mixture. Sprinkle with the chopped cilantro, if using, and garnish with more chili powder for extra heat.

Grilled corn is fantastic any time of year, and the creamy citrus spice of this lime mayo pairs wonderfully with our Signature Dry Riesling.

8 ears corn, shucked
2 Tbsp Trefethen extra virgin olive oil
kosher salt
black pepper, freshly ground
1 cup crumbled cotija cheese, divided into ⅔ cup and ⅓ cup
½ cup mayonnaise
½ cup sour cream
½ cup cilantro or parsley leaves, minced, plus more for garnish
2 tsp lime zest
1 tsp ancho chile powder
lime wedges, for serving

Steps:

  • Light a grill. On a sheet pan, toss the corn with the oil, then season with salt and pepper to taste.
  • In a small bowl, stir together ⅔ cup of the cotija cheese with mayonnaise, sour cream, cilantro or parsley, lime zest, and chile powder until well combined.
  • Place the corn on the hottest part of the grill and cook, turning as needed, until cooked through and charred, about 8-10 minutes.
  • Remove the corn from the grill and immediately brush each cob liberally with the cheese mixture and transfer to your favorite platter. Garnish each cob with a sprinkle of the remaining cotija cheese and more cilantro, then serve with lime wedges. Enjoy!
