CHIPOTLE CHICKEN FAJITAS

I got this out of a taste of home cookbook and it really is delicious. You can make it as spicy as you'd like and it won't effect the recipe. I didn't have any chipotle peppers so I used jalapenos and they worked just as well.

1 (12 ounce) bottle chili sauce
1/4 cup lime juice
4 chipotle chiles in adobo
1 lb boneless skinless chicken breast, cut into strips
1/2 cup cider vinegar
1/3 cup brown sugar, packed
1/3 cup molasses
4 medium green peppers, cut into 1-inch strips
1 large onion, cut into 1-inch pieces
1 tablespoon olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
10 flour tortillas (8 inch work best)
1 1/2 cups chopped tomatoes
1 cup Mexican blend cheese, shredded

Steps:

  • Place the chili sauce, lime juice and chipotle peppers in a food processor; cover and process until blend. Transfer 1/2 cup to a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 1-4 hours.
  • Pour remaining marinade into a small bowl; add the vinegar, brown sugar and molasses. Cover and refrigerate.
  • On six metal or soaked wooden skewers, alternately thread chicken, green peppers and onion. Brush with oil; sprinkle salt and pepper. Grill uncovered, over medium heat for 10-16 minutes or until chicken is no longer pink, turning occasionally.
  • Unskewer chicken and vegetables into a large bowl; add 1/2 cup chipotle-molasses mixture and toss to coat. Keep warm.
  • Grill tortillas, uncovered, over medium heat for 45-55 seconds on each side or until warmed. Top with chicken mixture, tomatoes, cheese and remaining chipotle-molasses mixture.

I love fajitas tacos and was thinking about what could I put on a spicy smoky chipotle chicken fajita and then it hit me... a cool lime sauce with sour cream, yogurt, a little lime and sugar. Well, it turned out to be a great contrast to the spicy fajita and really did helps cool it down; however, this is a "spicy hot" one. Make sure you got a nice tall glass of drink before you get started. Love all the flavors this taco brings and I was pleased with the sauce that is tangy and sweet.

MARINADE FOR CHICKEN
1 pound(s) chicken breast, sliced for fajitas
1 cup(s) orange juice
1/2 - of a lime juiced
2 tablespoon(s) chipotle sauce
GRILLING CHICKEN
2 tablespoon(s) chipotle sauce
1 teaspoon(s) cumin
1 teaspoon(s) corainder
1 teaspoon(s) salt
COOL LIME SAUCE
3 tablespoon(s) sour cream
1 small container of vanilla yogurt (6 oz.)
1 medium lime, juice and zest
CONDIMENTS FOR FAJITA TACOS
1 package(s) tortilla shells
6 - 8 medium argula, green leaf and/or red leaf lettuce
1 - 2 tablespoon(s) cool lime sauce, drizzled on chicken
1/4 cup(s) cilantro, chopped
1 pound(s) crisp bacon
1/2 cup(s) fresh salsa
2 medium limes, sliced and fresh squeezed

Steps:

  • Prepare your marinade for chicken and then place chicken in the marinade and cover with a lid; then refrigerate for at least an hour. We usually marinate for 4 to 6 hrs. Cook up 4 - 8 slices of crisp bacon. Set aside.
  • Prepare you lime sauce. Mix all the ingredients together.
  • Remove your fajitas from refrigerator. Drain and then place chicken in a bowl with the mixed chipotle sauce, cumin, coriander and salt. Coat the chicken as best as possible. Now, grill your chicken. If sliced fairly thin it should only take 6-8 minutes for chicken to be done. (Don't overcook or they will be dry.)
  • Assemble as you wish.
  • This is the tortilla shells that I used and they are high in fiber and low carb and still very tasty. Got them at WalMart's.
