Pineapple Pie image

This is a yummy pie topped with merinque! Whipped cream may be used for topping instead of meringue. Either topping is delicious!

Number Of Ingredients 12

FILLING
1 1/2 c crushed pineapple
2 egg yolks
1 c sugar
1 Tbsp cornstarch
1 Tbsp flour
1 Tbsp butter
CRUST
1 baked pie crust
MERINGUE
2 egg whites
1 Tbsp sugar

Steps:

  • 1. Blend cornstarch and flour into sugar
  • 2. Beat egg yolks and add pineapple, juice and all to above mixture.
  • 3. Cook in a double boiler until thick. Pour into baked pie crust.
  • 4. Whip egg whites stiff and add 1 tablespoon sugar. Put on pie and brown in oven. Cool, cut and enjoy!
