ITALIAN GRILLED CHEESE-N-TOMATO



Italian Grilled Cheese-n-Tomato image

1/2 cup extra-virgin olive oil
1 large clove garlic, cracked away from skin
8 slices crusty Italian bread
1 pound smoked fresh mozzarella cheese, sliced
2 ripe tomatoes, thinly sliced
8 basil leaves, torn

Steps:

  • Heat a grill pan over medium low to medium heat. Heat oil and garlic in a small pot over low heat. Brush 4 slices of the bread with garlic oil on 1 side. Place garlic oil side down on the grill. Top with sliced cheese, tomato and basil. Place another slice of bread on top of each sandwich. Brush sandwiches with garlic oil. Press sandwiches with heavy skillet or a brick covered with tin foil. Toast sandwiches on both sides to melt cheese.

This is a great twist on the classic grilled cheese. My grandmother taught me how to make these when I was a teenager. My kids love them!

3 eggs
2 tablespoons milk
2 teaspoons garlic powder
2 teaspoons Italian seasoning
2 tablespoons grated Parmesan cheese
6 slices American cheese
12 slices sandwich bread

Steps:

  • Whisk eggs, milk, garlic powder, Italian seasoning, and Parmesan cheese together in a bowl.
  • Place each American cheese slice between two pieces of bread to assemble 6 sandwiches.
  • Dip both sides of each sandwich in egg mixture.
  • Heat a non-stick frying pan over medium heat.
  • Place dipped sandwiches in the hot frying pan; cook until golden brown and cheese is melted, about 3 minutes per side.

4 tablespoons prepared pesto
4 slices provolone cheese
4 slices part-skim mozzarella cheese
5 teaspoons olive oil
Marinara sauce warmed, optional

Steps:

  • Spread four bread slices with pesto. Layer with cheeses; top with remaining bread. Spread outsides of sandwiches with oil., In a large skillet over medium heat, toast sandwiches for 3-4 minutes on each side or until cheese is melted. Serve with marinara if desired.

8 slices whole-grain bread
8 oz fontina or Swiss cheese, shredded (2 cups)
8 thin slices prosciutto or ham
24 fresh basil leaves
8 slices (1/4 inch) ripe tomatoes (about 2 medium)
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper

Steps:

  • Heat griddle or 12-inch nonstick skillet over medium heat.
  • Spread butter on one side of each bread slice. Layer unbuttered side of 4 of the bread slices with 1/4 cup of the cheese, 2 slices of the prosciutto, 6 of the basil leaves and 2 of the tomato slices. Sprinkle with salt and pepper. Top each with 1/4 cup of the remaining cheese and remaining bread slice, buttered side up.
  • In hot skillet, heat sandwiches 3 to 5 minutes or until cheese is slightly melted and bread is browned. Turn sandwiches over; heat 3 to 5 minutes longer or until cheese is melted and sandwich is golden brown.

I came up with this recipe for my niece. I combined grilled cheese sandwiches with garlic bread. Its tasty, its quick and its the perfect appetizer for friends, family and unexpected guests. Use a firm white bread for best results.

¼ cup unsalted butter
⅛ teaspoon garlic powder
12 slices white bread
1 teaspoon dried oregano
1 (8 ounce) package shredded mozzarella cheese
1 (24 ounce) jar vodka marinara sauce

Steps:

  • Preheat your oven's broiler.
  • Place 6 slices of bread onto a baking sheet. Spread a small handful of the mozzarella cheese over each slice. Top with the remaining 6 slices of bread. Mix together the butter and garlic powder, brush some over the tops of the sandwiches, or spread with the back of a tablespoon. Sprinkle with dried oregano.
  • Place baking sheet under the broiler for 2 to 3 minutes, until golden brown. Remove pan from oven, flip sandwiches, and brush the other sides with butter, and sprinkle with oregano. Return to the broiler, and cook until golden, about 2 minutes.

1 cup giardiniera (Italian hot vegetable salad), drained
1/4 cup salad olives (green olives with pimiento)
8 slices good quality crusty white bread, 1/2-inch thick slices
8 slices deli cut provolone cheese
4 tablespoons softened butter

Steps:

  • Heat griddle to medium.
  • In a food processor pulse chop the salad and olives into a fine relish. Spread 4 slices of bread with relish and top each with 2 slices cheese and 4 more slices of bread. Butter the outside of the sammies with softened butter and grill until golden on both sides, 4 to 5 minutes total. Cut and serve.

This recipe makes and excellent lunch but can also be used for parties, pitch-in dinners or a simple appetizer. Easy to make and very tasty! I like to add a sprinkling of Italian seasoning on top of the cheese for some extra flavor. Sliced black olives are also tasty. You can add whatever you like to spice up the Italian flavors.

8 slices Italian bread
16 slices provolone cheese
2 red peppers
1/4 cup butter

Steps:

  • Roast both red peppers and remove the skin, and slice into pieces to fit the sandwiches. (Bottle roasted peppers can be used. Just slice them to fit the sandwiches.).
  • Melt the butter in a small microwave safe bowl.
  • Brush one side of each slice of Italian bread with the melted butter. (Make sure to cover the edges carefully for the best crispness.).
  • Place slices of bread, butter side down on a grill side by side.
  • Place 2 slices of Provolone cheese on each bread slice.
  • Place red pepper slices on top of the Provolone.
  • Top each sandwich with the remaining slices of bread, butter side up.
  • Grill each sandwich at 325-350 degrees on the grill until golden brown.
  • Carefully flip each sandwich with a spatula and grill until golden brown.
  • Remove and serve.
  • For parties or pitch-in dinners cut each sandwich into quarters. Cutting corner to corner is a bit more festive.

This is a nice change from regular grilled cheese. A lot of adults get tired of regular grilled cheese by the time they have kids, this is one that you and your kids will love as well. You can cook them under your broiler if you wish, but be careful they will burn easily! :) You could also serve these as a side dish with Italian pasta instead of garlic bread!

butter or margarine
8 -16 ounces mozzarella cheese (depending on how much you like, I use shredded)
1 cup marinara sauce (any kind)
garlic powder

  • Place mozzarella cheese on un-buttered side of two pieces of bread, top with other two slices of bread.
