BROWN SUGAR GRILLED SALMON
Part of our annual trek to the mountains is cooking out streamside. This year I decided to try salmon and found this recipe on another site. I scaled it back to feed 2 and marinated the fish for about 6 hours. It was spectacular. You can baste the fish while it's cooking if you wish, but not necessary. We used a grill basket and oiled it first to prevent sticking.

Steps:
- sprinkle fillets with salt, lemon pepper and garlic powder to taste.
- Combine soy sauce, brown sugar, water and oil.
- Marinate fish in soy mixture for 2 hours or more.
- remove from marinade.
- Grill for 7 minutes per side.

GRILLED SALMON WITH BROWN SUGAR, GARLIC AND GINGER
Extremely easy. And easy to scale up for parties. Moist, sweet and salty, it's good hot or cold (or leftover in the best salmon sandwiches ever). My family won't let me cook salmon any other way.

Steps:
- Heat your grill to high.
- Mix together the sugar, salt, garlic powder and ginger powder.
- Arrange the salmon on a grill basket or on foil skin side down. Sprinkle the mix over the entire fillet.
- Place the grill basket on the rack and turn the heat down to medium high. Grill with the lid closed until the fish is firm to the touch and just cooked through. Grill time depends on the thickness of the fillet.

WAKEMAN'S BOURBON BROWN SUGAR PLANK GRILLED SALMON

Steps:
- Soak a 10 inch long, 6" to 8" wide, construction grade cedar plank 3/4" thick, in water for at least 24 hours before making the recipe.
- Make sure you keep the wood submerged by weighing it down with cans.
- Start your barbecue and heat it to high.
- place salmon in shallow, non-metallic dish. combine all but the lemon juice and pour on salmon, turning to coat and let sit at least 20 minutes.
- Put the plank on the BBQ and sprinkle with a little coarse salt.
- Close the cover for a couple of minutes or just until the top of the plank is nearly dry.
- Note: Keep a spray bottle of water close at hand in case the wood starts to burn.
- Place the filets on top of the plank.
- If your BBQ has two burners, turn off the one beneath the wood.
- If not, turn the heat to the lowest setting.
- Close the cover and cook for about 10- 12 minutes or until nearly cooked all the way through.
- Don't overcook.
- Once salmon is planked and cooking, pour leftover marinade into small saucepan, squeeze in lemon and simmer until reduced to glaze consistency,.
- basically as long as the salmon cooks ( 10-15 mins). you now have a fab sauce to drizzle on the salmon before serving! bon apetit!

GRILLED SALMON WITH BROWN SUGAR SOY MARINADE

- Season salmon fillets with lemon pepper, garlic powder, and salt. In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours. Preheat grill for medium heat. Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.
BROWN SUGAR & DIJON GRILLED SALMON

- 1. Tear off a large sheet of heavy duty aluminum foil and make a "boat" out of it - big enough to hold the fillet - with the sides going up about 3/4 inch. If you don't have heavy duty foil, just use two layers of foil to make your boat. Preheat your grill - you will need medium heat.
- 2. In a small sauce pan, place the brown sugar, butter and honey. Stir until melted, then remove from heat. Stir in the soy sauce, mustard, olive oil and ginger. Let cool for about 5 minutes.
- 3. Put the boat on a large cutting board (this makes it easy to transfer the boat to the grill), then place the salmon, skin side down, on the foil boat. Spread the brown sugar & mustard sauce evenly over the fish.
- 4. Transfer the salmon boat to your grill and cook until the edges start to brown and the fish is opaque and flakes easily. This will take 15-20 minutes, depending on the thickness of your salmon.
- 5. Note: Because of the sugar and honey, the glaze that drips onto the foil will burn. It's best to make your salmon boat as form fitting as possible, leaving only a 3/4 inch border between the fillet and the boat "sides".
- 6. Carefully remove the salmon boat from the grill, or you can serve directly from the grill. Cut into individual serving pieces. You don't have to cut through the skin. Just use a spatula to lift each piece away from the skin and onto a serving plate.

- Press seasoning and sugar evenly over filets, making sure they are coated completely.

GRILLED OR BAKED SALMON WITH BROWN SUGAR/GINGER
this is always a hit when I make it on the BBQ or in the oven.

- pat the brown sugar over the salmon, you can use more or less according to your taste. Real maple syrup works great too!
- sprinkle on the grated ginger, I like lots.
- top with lemon slices and dot with butter and it's ready!
GRILLED BROWN SUGAR SALMON

- On the side burner, melt the brown sugar, honey and butter in a small saute pan over medium-high heat. Remove from the heat and whisk in the mustard, soy sauce, olive oil and ginger. Let cool. Preheat grill to medium heat. Brush salmon with vegetable oil and season with salt and pepper to taste. Place the salmon skin side down on the grill. Coat the flesh of the salmon fillets with the brown sugar mixture. Grill for 6 to 8 minutes to medium doneness, turning once after 5 to 6 minutes.
