This dessert taco makes a fun little apple pie for one! It uses just a little pie filling, so use the rest as a pancake topping the next morning or invite friends over to join you for dessert!

⅓ cup apple pie filling
1 (6 inch) flour tortilla
1 teaspoon butter, melted
1 teaspoon cinnamon sugar, or to taste
1 scoop vanilla ice cream
2 tablespoons whipped cream, or to taste
1 pinch ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Pour apple pie filling into a bowl. Dice the apple slices.
  • Place tortilla inside a small oven-proof bowl so that it forms a cup. Brush the inside of the tortilla with melted butter; liberally sprinkle with cinnamon sugar.
  • Bake in the preheated oven until crisp, 10 to 12 minutes. Carefully remove from the bowl and cool on a wire rack.
  • Scoop ice cream into the taco cup and top with the apple pie filling. Garnish with a dollop of whipped cream and cinnamon.

What's for dessert on taco night? How about more tacos? This inventive dessert combines grilled apples, cinnamon and vanilla ice cream for a hands-free and fun dessert.

4 Old El Paso™ flour tortillas
2 apples cored and sliced in rings
1/8 teaspoon cinnamon
1 tablespoon sugar
1 cup vanilla ice cream
1/4 cup caramel sauce
Oil as needed for grilling

Steps:

  • Mix cinnamon and sugar together and place in shaker.
  • Grill sliced apples.
  • Brush on a little bit of oil, is they appear dry.
  • When apples are golden on both sides and have softened, grill tortillas for one 30 seconds each side.
  • Place apples in tortillas, sprinkle with cinnamon and sugar.
  • Add teaspoon sized scoops of vanilla ice cream on top of apples and drizzle with caramel sauce.
