1 lb hamburger, browned with the onion
1/4 cup white onion, diced
1 teaspoon fresh garlic, minced
1 (10 3/4 ounce) can tomato soup, undiluted
1 (14 1/2 ounce) can cut green beans
2 cups instant mashed potatoes, made in advance
salt and pepper

Steps:

  • Mom also likes to throw in her favorite seasonings too, if desired, to the hamburger mixture as it browns. Brown hamburger with the onion.
  • In a casserole dish, combine hamburger/onion mixture, tomato soup and green beans.
  • Mix together .
  • Top the whole dish with prepared mashed potatoes.
  • Bake uncovered for 30 minutes at 350 degrees Fahrenheit.
  • (Note: Mom actually never used instant potatoes. She made extra real mashed potatoes for dinner a day ahead and used those planned-ahead mashed potatoes).

4 ounces sliced bacon

Steps:

  • Melt butter in a large pot over medium-high heat. Add onion and cook, stirring occasionally, until translucent, about 5 minutes.

1 medium green bell pepper, seeded and chopped
1 red chili pepper, seeded and chopped
1/2 lb potato, peeled and chopped
2 cups chicken stock

1/2 cup skim milk
1/2 teaspoon salt
1/4 cup nonfat yogurt
1/4 cup dry-roasted cashews, unsalted

Steps:

  • Heat the oil in a large heavy pot over medium heat.

  • Directions In a large saucepan, heat the oil. When the oil is hot, add the ham, pan-fry until crispy and golden, about 2 minutes. Remove the pan from the heat and strain, reserving the oil and ham. Return the oil to the pan and heat. Add the onions and saute until soft, about 3 to 4 minutes. Season the onions with salt and pepper. Add the garlic, bay leaves and chilies, and cook for 5 minutes. Add the tomatoes and stock. Season with salt and pepper. Bring the liquid to a boil and reduce to a simmer. Cook for 15 minutes or until the tomatoes soften. Remove the bay leaves. Using a hand-held blender, puree the soup until smooth. Chill the soup. 5 - 6 medium/large tomatoes, diced
2 large thick cut slices of ham, diced (do not soak)
2000 ml of chicken broth
1 large onion, red or yellow, diced
2 large cloves of garlic, diced
2 sprigs worth of rosemary leaves, finely chopped
6 - 7 leaves of thyme, finely chopped
3 - 4 leaves of sage, finely chopped
4 - 5 black pepper corns, finely ground
1 pat of butter

Steps:

  • Sweat onions in butter in the bottom of a large pot (I use cast iron dutch oven but any type will work).
  • Just before the onions turn translucent add spices then add tomatoes and ham.
  • Add broth and simmer for 45 min to an hour. Serve hot with slices of well aged cheddar cheese and enjoy.

1 tbsp sweet smoked paprika
1 tsp brown sugar
2 tsp sherry vinegar
1 small garlic clove , very finely chopped
1 red chilli
1 tbsp chopped coriander leaves
125g pitted green olives , roughly chopped
4-5 tbsp extra virgin olive oil
1 tbsp white balsamic or sherry vinegar
1 preserved lemon or 1/2 if you are using homemade ones, rind cut into slivers (discard the flesh)
1⁄2-1 tsp preserved lemon brine, from the jar

Steps:

  • Heat the butter and oil in a large saucepan on a medium heat, add the onion, celery and carrot and fry until tender, without turning golden, about 10 mins. Add the bay and garlic, and fry for a minute before adding the tomatoes and stock. Simmer for 10 mins, stirring occasionally.
  • Remove the bay leaves, and blend the soup in a liquidiser or with a stick blender until smooth. Season well and add the smoked paprika, sugar and vinegar to balance the soup with sweet, smokiness and a little acidity.
  • For the salsa, crush the garlic with a pinch of salt using a pestle and mortar. Halve and deseed the chilli and chop roughly. Add to the mortar with the coriander and olives and bash, gradually adding the oil and vinegar until you have a rough paste (it should be chunky). Mix in the preserved lemon, then stir in the brine from the jar to taste.

first frost of the yr was last night so hubby picked green tomatoes......i had a bowl full...what to make my sis was tellin me bout an apple/green tomato salsa she was makin so i decided to try it as soup.... yummo!!!!

3 cup(s) 1/2'ved green cherry tomatoes
1 large green apple,cored and sliced
1 medium red apple,peeled,cored,sliced
2 small carrots,grated
1 tablespoon(s) onion powder+2
1 teaspoon(s) seasoned salt+2
1/8 tablespoon(s) cinnamon+2
1/8 teaspoon(s) dried celery leaves+2
2 teaspoon(s) splenda[optional]
2 cup(s) milk
6 slice(s) bacon[optional]...cooked crisp

Steps:

  • start night before.... in lg soup pot put tomatoes,apples,carrots and 1/2 all the spices...add 1 qt water... bring to boil reduce heat cook 45 min stir often so it does not stick to bottom of pan and burn taste... add spenda if needed[i did] put in food processor[i did in 2 batches] processe til smooth
  • put back in pan add rest of spices and milk... cover and put in fridge overnight....i ya waant cook bacon and mix in before servin but ya don't have too...i served with dollap of sour cream......
