SUNNY'S EASY GARLICKY LEMON BUTTER GREEN BEANS
Steps:
- Bring a pot of salted water to a boil. Prepare an ice bath. Blanch the green beans briefly in the boiling water, then transfer to the ice bath to stop the cooking process. Drain and set aside.
- In a large pan on medium-high heat, add the butter, garlic and lemon juice. When the butter is melted and the garlic is fragrant, add the green beans and toss until just heated through. Taste a green bean and season with salt and pepper if needed. Remove to a serving plate and wipe the pan clean. Add the almonds and lemon zest and quickly toast a minute or two. Sprinkle the toasted almonds and zest over the green beans and serve.

- Fill a saute pan or a frying pan with about 1/2 inch salted water; bring to a boil.
- Add green beans, cover, and cook until green beans are tender to the bite, about 3 to 5 minutes, depending on how crisp you like your green beans.
- In the meantime, melt butter in a nonstick frying pan over medium heat.
- Add the zest and continue to cook for about 1 minute.
- Drain the beans and wash under cold water until completely cooled.
- Put the green beans back in the pan and pour the lemon butter over them; add lemon juice, salt and pepper, and toss to combine.
- Transfer to a serving plate.
- Garnish with parmesan cheese.
- Serve.

- Trim the ends off the green beans and wash them well. Parboil for 4-5 minutes.
- Heat a frying pan over low heat, melt 1 tablespoon of butter, and sauté minced garlic for 30 seconds. Squeeze in the juice of one lemon along with a few lemon slices and the remaining butter.
- Drain the green beans and plunge them immediately in ice water. This will preserve the colour. Add them to the frying pan with the lemon butter and garlic sauce and season with salt and pepper. Sauté for a few minutes until they are the desired doneness. This will take approximately 5 minutes for beans with a slight bite to them, while cooking longer will produce softer beans. Serve immediately.

- Snap off the stem ends of the green beans, or cut them off in a big bunch with a knife.
- Heat a pan over a medium heat and add the butter. (It helps to use a pan with a light-colored bottom so you can keep track of the color.) Swirl the pan occasionally to be sure the butter is cooking evenly. As the butter melts, it will begin to foam. The color will progress from lemony-yellow to golden-tan to, finally, a toasty-brown.
- Once you smell that nutty aroma, add the green beans and saute for 3 to 4 minutes. Add some lemon juice and salt and pepper, then transfer to a platter in batches with tongs.

This is a super quick recipe that uses fresh French green beans but would work equally well with frozen. The recipe was printed in Betty Crocker Thansgiving booklet, November 2005. The recipe calls for butter. Please do not sub margarine! The original recipe called for dried marjoram leaves. Not having those I used Penzeys Bouquet Garni with rewarding results.
