My family loves vegetables, and I am always looking for new ways to spice them up. This recipe is one of our favorites for green beans. I use blue cheese, but feta or mozzarella can be substituted.

1 ½ pounds fresh green beans, cut into 1 1/2 inch pieces
1 tablespoon olive oil
1 tablespoon garlic, minced
½ teaspoon dried oregano
½ teaspoon dried thyme
¼ teaspoon salt
½ cup crumbled blue cheese

Steps:

  • Combine beans, olive oil, garlic, oregano, thyme, and salt in a microwave-safe dish.
  • Cover and cook in the microwave on high, stirring twice, until beans are tender, 7 to 9 minutes. Stir in blue cheese. Serve immediately.

Sauteed Green Beans with Lemon and Blue Cheese image

1 tablespoon butter
1 tablespoon vegetable oil
8 ounces green beans, trimmed
1 tablespoon Worcestershire sauce
1 tablespoon sriracha or other hot sauce
Fresh lemon juice, as needed
2 ounces crumbled blue cheese

Steps:

  • In a large skillet over medium-high heat, heat the butter and oil. When hot, add the green beans in one layer. When the beans are just beginning to color, stir them around and add the Worcestershire, sriracha and lemon juice. Cook until the beans are crisp-tender, a few more minutes. Transfer them to a plate, crumble over the blue cheese and serve.

EASY GREEN BEAN CASSEROLE WITH BLUE CHEESE



Easy Green Bean Casserole with Blue Cheese image

If your blue cheese is very strong, start by adding a lesser amount then adding more to taste.

2 tablespoons extra-virgin olive oil
1 sweet onion, chopped
2 garlic cloves, minced
1/2 cup butter, divided
2 tablespoons flour
1 pint heavy cream
1/2 cup crumbled blue cheese
4 cans green beans, drained very well
1 cup french fried onions, chopped
1 cup panko breadcrumbs
kosher salt & freshly ground black pepper

Steps:

  • Preheat oven to 400F.
  • Drain green beans in a colander. Allow to drain thoroughly.
  • Heat EVOO in a large skillet. Add onions and cook over medium heat until soft and translucent, about 5 minutes. Add garlic, cook one minute more. Add 1/4 cup butter to pan, melt and stir into onions. Sprinkle flour over butter mixture, stir and cook flour for another 1-2 minutes. Slowly stir in heavy cream. Bring to a simmer, add blue cheese and turn off heat. Stir until blue cheese is incorporated (small pieces are okay). Season to taste with salt and pepper.
  • Gently add green beans to skillet and mix until well-coated. Pour mixture into a baking dish.
  • In a small bowl, melt remaining butter in microwave. Add chopped french fried onions and breadcrumbs, mix thoroughly. Sprinkle mixture over casserole.
  • Bake for 10-15 minutes or until hot and bubbly and topping is nicely browned. Serve immediately.

1 tablespoon olive oil
¼ cup coarsely chopped walnuts
1 lemon, zested and juiced
1 teaspoon fresh thyme leaves
salt and freshly ground black pepper to taste

Steps:

  • Bring a large pot of water to a boil and drop in the green beans. Simmer over medium-high heat until beans are just barely cooked and still bright green, about 2 minutes. Drain immediately and rinse under cold water. Drain and set aside.
  • Heat oil in a skillet over medium heat. Add drained beans, nuts, lemon zest, lemon juice, and thyme. Continue to cook until most of the juice has evaporated, about 3 minutes. Season with salt and fresh ground pepper. Serve immediately.

1/2 cup water
1/2 teaspoon salt
1/4 cup finely chopped onion
2 tablespoons butter

1 tablespoon lemon juice
3/4 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/8 teaspoon paprika

  • In a 3-qt. saucepan, combine beans, water and salt; bring to a boil. 2 pounds fresh green beans, washed and trimmed
2 tablespoons butter
1 cup chopped walnuts
2 tablespoons walnut oil
2 tablespoons minced fresh parsley
ground black pepper to taste
salt to taste

Steps:

  • Place the walnuts on an ungreased baking sheet. Bake at 350 degrees F (175 degrees C) for 5 to 8 minutes.
  • Cook beans in large pot of boiling salted water until just tender, about 5 minutes. Drain. Rinse beans with cold water, and drain well. Can be prepared 6 hours ahead. Let stand at room temperature.

1 lb fresh green beans, trimmed
1 tablespoon butter or 1 tablespoon cooking margarine
1/4 cup chopped walnuts
1/4 cup blue cheese, crumbled

Steps:

  • Steam or cook green beans for about 5 minutes, until tender-crisp. Drain and set aside.
  • Melt butter in a medium saucepan over medium heat. Add walnuts and saute for a minute or so, to soften the nuts and flavor the butter.
  • Add the cooked green beans and stir to coat beans with the flavored butter.

  • In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. Drain, reserving 2 tablespoons drippings. , In the drippings, cook and stir the beans for 8-10 minutes or until crisp-tender. Add the blue cheese, pecans, pepper and bacon. Cook for 2 minutes or until heated through.
