4 packages (16 ounces each) frozen cut green beans
1/4 cup finely chopped onion
1/4 cup butter, cubed
2 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon paprika
1 teaspoon Worcestershire sauce
1/2 teaspoon ground mustard
2 cups evaporated milk
8 ounces process cheese (Velveeta), shredded
TOPPING:
1/4 cup dry bread crumbs
2 teaspoons butter, melted

Steps:

  • Cook green beans according to package directions. Meanwhile, in a Dutch oven, saute onion in butter until tender. Remove from the heat; whisk in the flour, salt, paprika, Worcestershire sauce and mustard until blended. , Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Remove from the heat; stir in cheese. , Drain beans; gently fold into cheese sauce. Transfer to a large serving bowl. Toss bread crumbs and butter; sprinkle over beans.

This recipe originally came from the cookbook "Candlelight and Wisteria" from the Lee-Scott Academy. It was originally submitted by Thelma Wilson

5 cups frozen cut green beans
1/2 cup onion, thinly sliced
1 tablespoon fresh parsley, minced
1/4 cup butter, melted and divided
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon lemon rind, grated
1/4 teaspoon black pepper
1 (8 ounce) container sour cream
1/2 cup cheese (2 oz)
1/2 cup dry breadcrumbs, crushed fine (crushed ritz crackers can be substituted, if preferred)

Steps:

  • Cook green beans according to the package directions; drain well and set aside.
  • Cook onion and parsley in 2 tbsp butter in a large skillet over medium-high heat, stirring constantly, until tender.
  • Reduce heat to medium-low. Stir in flour, salt, lemon rind, and pepper. Add sour cream, stirring well. Add green beans; cook until thoroughly heated, stirring occasionally.
  • Spoon mixture into an ungreased 8-inch square baking dish; sprinkle with cheese. Combine breadcrumbs and remaining 2 tbsp butter; sprinkle over cheese.
  • Broil 8 inches from heat (with electric oven door partially opened) 5 minutes or until cheese melts and breadcrumbs are browned.

1 lb fresh green beans - cut in pieces
1 c water
1/2 lb mushrooms, sliced
3 Tbsp butter
1/2 c ham, cooked and chopped
1 dash(es) nutmeg
1/4 c parmesan cheese, grated
1/2 tsp salt
2 Tbsp butter
1 c heavy cream
1 egg
1 lemon, juiced
salt and pepper to taste

Steps:

  • 1. Cook green beans in salted water using the 1/2 teaspoon salt in covered pot until crisp tender. Drain.
  • 2. In skillet, saute sliced mushrooms in 2 tablespoons butter.
  • 3. Add mushrooms to green beans using slotted spoon.
  • 4. Add 3 tablespoons butter and cream to beans and cook, uncovered, on low heat until absorbed.
  • 5. In a small bowl, beat egg, nutmeg, lemon juice and grated parmesan cheese.
  • 6. Stir ham into green beans and mushrooms and heat through.
  • 7. Mix egg mixture in and remove form heat.
  • 8. Makes 6 servings.

1 pound green beans, trimmed
1 tablespoon butter
1/2 cup thinly sliced red onion
1 tablespoon McCormick® Perfect Pinch® Salad Supreme Seasoning

Steps:

  • Cook beans in boiling water in large uncovered saucepan on medium-high heat 3 minutes or until tender-crisp. Drain immediately and rinse with cold water. Set aside.
  • Melt butter in large skillet on medium-high heat. Add onion; cook and stir 3 to 4 minutes or until tender. Add green beans; cook and stir 1 to 2 minutes. Add Seasoning; toss to coat well.
