This is a very healthy and low fat stew, very simple and healthy. you can do it when you're tired and not in the mood of any fancy cooking

2 onions, diced
3 garlic cloves, minced
200 g meat (pieces or ground)
5 tomatoes, diced
1 kg green beans, cleaned and prepared
salt
2 teaspoons allspice
1 teaspoon black pepper
1/2 teaspoon cinnamon

Steps:

  • boil the meat in 3-4 cups of water first and remove the scum that appears on the water surface.
  • add to it a cinnamon stick, 1/2 onion, salt to taste.
  • when the meat is half done, remove the onion and cinnamon stick from the water.
  • Fry the onions and garlic in some oil separately until they are yellow in color and add them to the meat and water mixture.
  • Add to the above mixture the tomatoes and green beans and add the above spices and adjust the salt to your taste. ( to prepare green beans the end of the beans should be removed and they should be cut in half)
  • If water is not covering all the green beans, add more water and adjust salt if needed.
  • let the mixture boil for around 45 minutes until the green beans are completely cooked i.e. they are very soft.
  • serve with rice.

My grandmother was from Syria and she always made these green beans for family gatherings. I have cut the oil to one tablespon, while dieting and left out the pine nuts, and they are still awesome. They are also one of my favorite omlette stuffings, with a little feta cheese...Enjoy!

2 tablespoons olive oil
2 large onions, sliced thin
3 garlic cloves, minced
2 (15 ounce) cans green beans, drained
1 (28 ounce) can diced tomatoes
1 teaspoon ground cinnamon
1 teaspoon ground cumin
salt
1/2 cup pine nuts
3 tablespoons olive oil
1/2 teaspoon cumin

Steps:

  • In a large pot over low heat, sautee onions in olive oil with a little salt until very brown.
  • To the same pan, add garlic, cumin and cinamon and sautee another 2 minutes.
  • Add tomatoes in juice and cook until spice and onions have incorporated into the liquid.
  • Add DRAINED green beans - cover and cook for at least 10 minutes.
  • Add salt to tast.
  • TOPPING While beans are cooking, toast pine nuts in a DRY sautee pan over medium heat. Be sure to turn them and watch closely as they burn quickly - about 2 minutes. Add cumin and olive oil and remove from heat.
  • To serve place beans in large bowl and dirzzle pine nut mixture over the top.

2 tablespoons unsalted butter
1 tablespoon olive oil
1 lb lamb stew meat, cubed
1 medium onion, peeled and sliced
1 garlic clove, peeled and minced
1/4 teaspoon ground cinnamon
1 teaspoon salt
1/2 teaspoon pepper
2 lbs fresh green beans (snap ends off and slice beans into 2 inch pieces)
1 (14 1/2 ounce) can diced tomatoes, drained
1 (8 ounce) can tomato sauce
1 cup water

Steps:

  • Heat butter and olive oil in frying pan over medium-high heat. Add lamb and onions and cook until lamb begins to brown and onion begins to turn translucent.
  • Stir in garlic, cinnamon, salt and pepper. Reduce heat to low.
  • Stir in green beans. Add tomatoes, tomato sauce and water. Cover pan and cook over low heat about 1 hour, or until lamb is tender.
  • Serve over cooked rice.
