GREEN BEAN SUPREME
A nice addition to the usual Thanksgiving side dishes!

Steps:
- Steam beans over a pot of boiling water until tender but still firm. Rinse under cold water to cool.
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium heat, melt butter and saute onions. Add salt, soy sauce, hot pepper sauce, Worcestershire sauce and mushroom soup; mix well.
- In a small casserole dish, layer half the beans, chestnuts, cheese and soup mixture. Repeat layer.
- Bake at 350 degrees F (175 degrees C) for about 30 minutes or until hot and bubbly. Top with onions and heat 10 minutes longer.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Place the bacon in a skillet, and cook over medium-high heat until evenly brown. Drain on paper towels. When cool, crumble and set aside.
- Place the butter in a skillet, and melt over medium heat. Stir in the ginger, onion, and mushrooms; cook until onion is transparent and tender, about 5 minutes. Remove from the heat, and mix in the Worcestershire sauce. Add salt and pepper to taste.
- Stir the beans, bacon, and sour cream together in a large bowl until evenly blended.
- Spread half of the green bean mixture over the bottom of the prepared casserole dish. Arrange half of the water chestnuts over the beans, then half of the Cheddar cheese, and half of the mushroom mixture. Spread the remaining green beans over the mushrooms, and repeat layers with the remaining water chestnuts, Cheddar cheese, and mushrooms. Top with the macadamia nuts.
- Bake in preheated oven until top is hot and sauce is bubbly, about 30 minutes. Serve hot.

- In a large skillet, saute onion, dill and parsley in butter until onion is tender. Stir in flour and sour cream. Bring to a boil; cook and stir for 2 minutes or until thickened., Cook the beans according to package directions; drain. Stir beans and cheese into the sour cream mixture. Transfer to a greased 1-qt. baking dish; sprinkle with potato chips. Bake, uncovered, at 350° for 30-35 minutes or until bubbly.

GREEN BEAN SUPREME
I have been using this recipe for ages. I found it in the newspaper years ago and I like to make it when I have company as a side dish with whatever else I happen to be making, i.e. steak, chicken or chops. If you're a garlic lover, then just crush the cloves into the beans rather than leaving them whole.

- Parboil beans in salted water 7-10 minutes, then drain.
- Cut bacon into 1" slices and begin to fry slowly.
- Add mushrooms and garlic cloves.
- Stir and fry until mushrooms are cooked, about 8-10 minutes.
- Remove garlic cloves.
- Add the green beans and mix together, then season to taste with salt and pepper.

- 1. Melt butter. Cook onion in butter slightly, about 1 minute. 2. Blend dry ingredients into butter-onion mixture. 3. Stir in milk. Cook until thick and bubbly. Remove from heat. 4. Stir in sour cream and green beans. 5. In 1-quart casserole, alternate layers of the bean mixture with Swiss cheese. Divide bean mixture into thirds. Put 1/3 of bean mixture in casserole. Top with 1/2 of cheese. Then layer again with 1/3 of bean mixture and 1/2 of cheese. Top with remaining bean mixture. 6. Make topping: Combine melted butter with bread crumbs; sprinkle on casserole. 7. Bake at 400 degrees for 20 minutes.

- Saute' the onion in the butter. Blend in the flour; add the sour cream and cook until thickened, stirring constantly. Add the cooked beans, salt and pepper to taste. Turn into a greased 8x6-inch casserole dish and top with the shredded cheese. Bake at 350 degrees for approximately 20 minutes or until the beans are hot and the cheese is bubbly.

Green Bean Casseroles are always good holiday comfort food. I wanted to kick it up a notch by using fresh green beans, fresh baby portabella mushrooms, onion, swiss cheese, bacon, roasted garlic, and a dash of nutmeg. All I can say is WOW - I will be making this more often.

- 1. Preheat oven to 350 degrees. Cover a casserole dish with aluminum foil. (optional - I like easy clean up). Slice the top off the head of garlic place in dish and drizzle with olive oil. Bake 20 minutes. Add bacon slices and cook until bacon is done and garlic is roasted; about 10 additional minutes. Remove from dish and set aside to cool.
- 2. In a large skillet pour the bacon grease and olive oil from casserole dish. On medium heat add green beans. Sautee until tender-crisp about 15 minutes. Add minced onion and mushrooms and continue to cook another 5 to 7 minutes until mushrooms are done. Remove skillet from heat.
- 3. In a large mixing bowl squeeze roasted garlic cloves from head of garlic and mash into a paste.
- 4. To the bowl add cream of mushroom soup, sour cream, nutmeg, and pepper. Stir until well combined.
- 5. Add green bean mixture, potato chips, 1/4 cup french fried onions, bacon-crumbled, and shredded swiss cheese. Fold gently until well combined.
- 6. Pour mixture back into casserole dish and bake 25 minutes - covered. Remove cover, top with the rest of the french fried onions and bake another 5 minutes.
