This green bean casserole makes a wonderful French side dish - made using green beans, Progresso® bread crumbs and chicken broth.

2 bags (12 oz each) frozen cut green beans
1/2 cup butter or margarine
1 small onion, finely chopped (1/4 cup)
2 tablespoons Gold Medal™ all-purpose flour
1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
1/4 teaspoon ground red pepper (cayenne)
1 cup sour cream
1 1/2 cups Progresso™ panko crispy bread crumbs
1/2 cup freshly grated Parmesan cheese

Steps:

  • Heat oven to 400°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Cook green beans as directed on bag; set aside.
  • Meanwhile, in 3-quart saucepan, melt 1/4 cup of the butter over medium-high heat. Cook onion in butter 4 minutes, stirring occasionally, until tender. Reduce heat to medium. Sprinkle onion with flour; cook 3 minutes longer, stirring constantly. Stir in broth. Heat to boiling. Remove from heat. Stir in black pepper, salt, red pepper and sour cream with wire whisk until blended. Stir in green beans. Spoon mixture into baking dish.
  • In medium microwavable bowl, microwave remaining 1/4 cup butter uncovered on High until melted. Add bread crumbs and cheese; mix until blended. Sprinkle evenly over green bean mixture.
  • Bake uncovered 20 to 23 minutes or until bubbly and topping is golden brown.

10 slices bacon
1 cup water
2 cups frozen cut green beans
3 tablespoons all-purpose flour
½ cup heavy cream
¾ cup shredded sharp Cheddar cheese
½ cup dry bread crumbs

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a casserole dish.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes.
  • Meanwhile, bring water to a simmer. Add green beans and cook until tender, 5 to 10 minutes. Drain beans, reserving cooking liquid. Drain bacon slices on paper towels, reserving grease in the skillet. Crumble bacon.
  • Heat 3 tablespoons of the reserved grease. Stir in flour until blended and nutty in color. Add reserved cooking liquid and cream, whisking constantly until smooth and thick, about 5 minutes. Fold in beans and Cheddar cheese. Pour into the prepared baking dish. Cover with bread crumbs.
  • Bake in the preheated oven, uncovered, until hot and bubbling, 30 to 35 minutes. Sprinkle bacon on top before serving.

Kosher salt
1 1/2 pounds green beans, trimmed and halved
3 cups small cauliflower florets (from 1/2 head)
5 tablespoons unsalted butter
2/3 cup panko
Freshly ground black pepper
3/4 cup shredded gruyère cheese
2 cloves garlic, minced
3 tablespoons all-purpose flour
3 cups half-and-half
1/4 cup grated parmesan cheese
1/4 teaspoon mustard powder
Pinch of cayenne pepper
Chopped fresh chives, for topping

Steps:

  • Bring a large pot of generously salted water to a boil. Add the green beans and cook until bright green and crisp-tender, 3 to 4 minutes. Transfer to a paper towel-lined baking sheet with a slotted spoon. Add the cauliflower to the boiling water and cook until just tender, 3 to 4 minutes. Transfer to the baking sheet with the slotted spoon. Pat the vegetables dry.
  • Preheat the oven to 375˚. Melt 2 tablespoons butter in a medium saucepan over medium heat. Add the panko and cook, stirring, until golden brown, 4 to 5 minutes; season with salt and black pepper. Transfer the panko to a bowl and let cool; reserve the saucepan. Add the gruyere to the panko and toss; set aside.
  • Wipe out the saucepan and add the remaining 3 tablespoons butter; melt over medium heat. Add the garlic and cook, stirring, until softened, 1 minute. Sprinkle in the flour and cook, stirring, 1 minute. Gradually add the half-and-half, whisking constantly. Bring to a boil, then reduce the heat and simmer, whisking occasionally, until thickened, about 5 minutes. Add the parmesan, mustard powder, cayenne and 2 teaspoons salt and cook, stirring, until the parmesan is melted, about 30 seconds.
  • Spread one-third of the cream sauce in a 9-by-13-inch baking dish. Top with the green beans and cauliflower, then the rest of the sauce. Sprinkle with the panko-gruyere mixture. Bake until the gruyere is melted and the sauce is bubbling around the edges, 25 to 30 minutes. Top with chives.

I saw this a few years ago on TV. I don't remember what show. I quickly wrote it down because it was so easy and looked so good.Instead of the green bean casserole during the holidays I make this one.

1 1/2 lb fresh green beans cleaned
3 oz of blue cheese
1 pt heavy cream
1/2 c plain bread crumbs
1/4 c melted butter

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Bring salted water to a boil and add the green beans and boil for 6 mins.
  • 3. Drain in a colander lined with a paper towel.
  • 4. Mix butter and bread crumbs together until crumbley.
  • 5. In a casserole dish sprinkle about a third of the bread crumb mixture on the bottom of the dish.
  • 6. Then place the beans on top.
  • 7. Crumble the blue cheese and add that next.
  • 8. Pour the cream over the beans and cheese.
  • 9. Sprinkle the remaining bread crumbs over the top and bake for 15 mins. When you take it out of the oven let it rest until the cream settles.

1 1/2 lbs fresh green beans, washed and trimmed
3 ounces blue cheese
1 pint heavy cream (no substitutes)
1/4 cup melted butter (no substitutes)
1/2 cup plain breadcrumbs
1/4 teaspoon fresh ground pepper, to taste

Steps:

  • Pre cook beans in lightly salted water about 5 to 6 minutes.
  • While beans are cooking, mix bread crumbs and butter.
  • Drain beans in bowl lined with paper towels to absorb moisture.
  • Put about 1/3 of the crumb mixture in bottom of lightly sprayed casserole dish.
  • Add green beans, crumbled bleu cheese and heavy cream.
  • Add the rest of crumb mixture and season to taste with pepper.
  • Bake at 350 for about 15 min.until bubbly.
  • Let rest for about 5 minute before serving, as it will be extremely hot and could burn your mouth!

Steps:

  • Preheat oven to 350°.
  • Melt 2 tablespoons butter in a medium saucepan over medium heat.
  • Add in flour and stir until bubbly.
  • Add in milk and stir about 2 minutes or until thickened.
  • Add in sugar, salt, pepper, and onion; fold in sour cream and set aside.
  • In a medium-size pan over medium heat, add beans and 1/2 cup water.
  • Cover and cook about 5 minutes or until beans are crisp-tender; drain well.

100 g bacon, medium diced
500 g (1 package) white mushrooms, sliced
150 g cooked ham, medium diced
150 g Gruyere cheese, grated
1/4 cup flat leaf parsley, chopped
salt and pepper to taste

Steps:

  • 1. Preheat oven at 400 F (200 C). Place a rack in the middle of the oven. 2. In a big pot, bring water to a boil, salt lightly and add green beans. Cook them over medium heat for 15 - 20 minutes (until al dente, but not soft). Drain in a strainer and set aside. 3. In a large skillet, fry bacon over medium heat until crisp. Add mushrooms and cook, stirring now and then, until all liquid has evaporated. Season with salt and pepper to taste. Add diced ham and mix well. 4. Transfer mixture into an ovenproof gratin dish. Place green beans in an even layer on top. Sprinkle with Gruyere. 5. Bake gratin for 20 - 25 minutes. Sprinkle with parsley and serve.

1 pound(s) sweet onions (vidalia, maui, or walla walla), halved and thinly sliced
1/4 cup(s) butter
1/4 cup(s) all purpose flour
1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
1/8 teaspoon(s) ground nutmeg
1 cup(s) chicken broth
1 cup(s) half and half, light cream, or milk
1 1/2 cup(s) soft bread crumbs (2 slices)
3 tablespoon(s) grated parmesan cheese
2 tablespoon(s) olive oil
- fresh thyme sprigs, optional

Steps:

  • Cook the green beans according to package directions; drain well and set aside.
  • In a covered medium-size saucepan, cook onion slices in a small amount of boiling water for 4 to 5 minutes or until tender. Drain and set aside.
  • For sauce, in the same saucepan, melt butter. Stir in the flour, salt, pepper, and nutmeg. Add broth and half-and-half. Cook and stir until mixture is thickened and bubbly.
  • In an ungreased 2-quart baking dish, layer half of the beans, all of the onions, and remaining beans. Spoon sauce over all.
