"HORIATIKI SALATA" GREEK VILLAGE SALAD

Time 30m

Number Of Ingredients 9

4-5 ripe, tomatoes
1 large onion
1 cucumber
1 green bell pepper
1/4 lb (113.5grams)greek feta cheese, sliced or crumbled
dried greek oregano (rigani)
salt
extra virgin olive oil
12 greek olives (kalamata, green cretan olives, etc.)

Steps:

  • 1. Wash and dry the tomatoes, cucumber, and green pepper. Clean off the outer skin from the onion, wash, and dry. Cut the tomatoes into bite-sized irregularly shaped chunks, removing the core. Note1 Many cooks peel the tomatoes if the skins are tough; it's a personal call. Note2 I would taste the feta cheese before adding salt to the salad as feta cheese is usually a salty cheese.
  • 2. Slice the cucumber into 1/4-inch slices, cutting slices in half (whether or not you peel the cucumber is a personal choice). Salt lightly. Slice the pepper into rings, removing the stem and seeds. Slice the onion into thin rings.
  • 3. Combine the tomatoes, cucumbers, green pepper and onion in a large salad bowl. Sprinkle with oregano, pour olive oil over the salad, and toss. Just before serving, place the feta on top of the salad , either as a slice (as in photo) or crumbled , and toss in some olives.
  • 4. Sprinkle the cheese with oregano (and pepper if desired). Drizzle the oil over the top, and serve. Additional ingredients: Capers: toss in a few if you like them.

GREEK VILLAGE SALAD (NICK AND MARINA MAKRIS HORIATIKI SALAD)

Greek Village Salad (Nick and Marina Makris Horiatiki Salad) image

Recipe from one of our favorite places to eat when in the city - Nicky's! Love this recipe shared by Nick and Marina Makris in a local cookbook. An awesome salad that allows the fresh taste of the ingredients to shine and just the way I like it! I do offer a Greek dressing when serving to guests, but find most enjoy the salad unadorned - and always an empty bowl.

MY GREEK VILLAGE SALAD

My Greek Village Salad image

Greek salad is by far the most popular in any home, taverna or restaurant during summer, when tomatoes are in season. I've been fortunate to visit Crete many times and taste their wonderful foods. One of them being the popular "Dakos" an appetizer, using the rusk as a base. I'll post it soon. Also added to summer salads like I did here. My addition of corn is optional. I had leftover corn from a Mexican dinner and thought of adding it to give my own touch. I don't remember how much I added so you can add as little or as much according to your taste or not at all.

Categories     Other Salads

Number Of Ingredients 10

3-4 - barley or whole wheat rusks
5-6 - tomatoes, peeled & finely chopped or diced
2 - cucumbers, peeled & finely diced
2 - green bell peppers,seeded & diced
2 - onions, finely chopped
1 cup(s) feta cheese, cubed or crumbled
1/2 cup(s) kalamata olives
1 - handful capers, rinced of brine
- freshly ground pepper
1/2 cup(s) evoo

Steps:

  • Briefly wet rusks by holding them under running water or quickly dipping in a bowl of water. Crumble and place in salad bowl. Drizzle with half of the olive oil and season with very little salt. Don't forget you'll be adding Feta cheese later.
  • Finely chop or dice tomatoes, cucumbers, bell peppers & onions. Place in salad bowl on top of rusk. Add the Feta cheese, Kalamata olives & capers. Sprinkle with oregano & freshly ground pepper and drizzle with the rest of the olive oil.
  • Sometimes I don't have rusks but always have pita bread in my freezer. So if you can't find barley or wheat rusks. Grill a couple of pita breads, coarsely crumble and add to the salad bowl before the tomatoes to catch all the salad liquid. It might not be the traditional Cretan salad but it's pretty close and still Greek:) KALI OREXI /ENJOY!!!
