PINEAPPLE RED CURRY WITH NEW ZEALAND MUSSELS image

Number Of Ingredients 6

1 tablespoon of red curry paste (available in good supermarkets)
1 tablespoon of vegetable oil
2 cups of coconut cream
3 cups of New Zealand mussels
4 cups of crushed pineapples with juice
1/2 cup of fish sauce

Steps:

  • 1. Cook curry paste in vegetable oil on a hot pan until the aroma is released (about two minutes) 2. Add 1/4 of coconut cream and stir gently until creamy. 3. Add mussels and the remaining coconut cream. When it starts to simmer bring the heat to low. 4. Add pineapples and fish sauce. Let it simmer for 5-10 minutes. Serve warm with steamed rice.
