My wife and I ate sandwiches similar to these at a restaurant and enjoyed them. But they weren't nearly as flavorful as this easy and zesty recipe I came up with! -Tom Wolf, Tigard, Oregon

1 pound boneless skinless chicken breasts, cut into 1-inch cubes
1/3 cup fat-free creamy Caesar salad dressing
1/4 cup crumbled feta cheese
1/4 cup pitted Greek olives, finely chopped
1/4 teaspoon garlic powder
8 pita pocket halves
8 lettuce leaves
1 medium tomato, sliced
1 small onion, sliced

Steps:

  • In a large nonstick skillet coated with cooking spray, cook and stir chicken over medium heat until no longer pink. Add the dressing, cheese, olives and garlic powder; heat through., Line pita halves with lettuce, tomato and onion; fill each with about 1/3 cup chicken mixture.

Greek salad on a bun makes a wonderfully satisfying meal. The English muffins absorb the sweet and tangy juices from the salad without becoming soggy.

Number Of Ingredients 13

2 tomatoes, ripe but firm, 1 thinly sliced, 1 cut in small dice
2 ounces cucumber, thinly sliced
2 ounces green pepper about 1/2 small pepper, seeded and thinly sliced
1 slice red onion, cut in half, rings separated, rinsed and drained optional
1 tablespoon crumbled feta (about 1/2 ounce)
1 to 2 teaspoons chopped fresh mint
1 teaspoon sherry vinegar or red wine vinegar
2 teaspoons extra virgin olive oil
Salt
freshly ground pepper (optional)
2 small (3 1/2-inch) whole-wheat English muffins, lightly toasted
2 teaspoons mayonnaise
Dijon mustard (optional)

Steps:

  • In a medium bowl, combine the diced tomato, cucumber, green pepper, onion, feta and mint. Toss with the vinegar and olive oil. Season if desired with salt and pepper.
  • Spread the bottom half of an English muffin with half the mayonnaise. Layer half of the sliced tomato on top. Top with half the Greek salad mixture. Spread the top half of an English muffin with mustard if desired, and place on top of the salad. Press down, cut in half and serve. Alternately, you may wrap the sandwich in plastic and refrigerate. Use the remaining ingredients for a second sandwich.

4 (6 inch) plain sub rolls
4 leaves green leaf lettuce
16 ounces roast beef, thinly sliced
1 cup chopped tomato
12 pepperoncini peppers, sliced
12 greek black olives, pitted and sliced
1/4 cup crumbled feta cheese
1/4 cup bottled vinaigrette dressing
1 teaspoon dried oregano leaves

Steps:

  • On open sub rolls, place lettuce leaves and top with roast beef.
  • Sprinkle on tomatoes, peppers, olives and cheese.
  • Sprinkle each sandwich with 1 tablespoon dressing and 1/4 teaspoon oregano.
  • Can double or triple this recipe.

1 medium onion, finely chopped
1 tablespoon olive oil
2 garlic cloves, minced
1 pound fresh baby spinach
1 cup (4 ounces) crumbled feta cheese
1/4 cup pine nuts, toasted
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
8 slices Italian bread (1/2 inch thick)
4 teaspoons butter, softened

Steps:

  • In a large nonstick skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the spinach; cook and stir until wilted. Drain. Stir in the feta, pine nuts, salt, pepper and nutmeg., Spread over 4 bread slices; top with remaining bread. Spread outsides of sandwiches with butter. Grill, uncovered, over medium heat until bread is browned and cheese is melted, turning once, 3-4 minutes. Cut each sandwich into quarters.
