1 medium red grapefruit
1 medium fennel bulb, halved and thinly sliced
1/4 cup thinly sliced red onion
VINAIGRETTE:
3 tablespoons fresh mint leaves
2 tablespoons sherry vinegar
1-1/2 teaspoons honey
1/8 teaspoon salt
1/8 teaspoon coarsely ground pepper
2 tablespoons olive oil

Steps:

  • Cut a thin slice from the top and bottom of the grapefruit; stand grapefruit upright on a cutting board. With a knife, cut off peel and outer membrane from grapefruit. Cut along the membrane of each segment to remove fruit. Arrange fennel, grapefruit and onion on a serving platter., Place mint, vinegar, honey, salt and pepper in a small food processor; cover and process until mint is finely chopped. While processing, gradually add oil in a steady stream. Drizzle over salad.

1 tablespoon butter
3 tablespoons olive oil, divided
16 large sea scallops
½ medium red grapefruit
½ bulb fennel
3 cups baby spinach leaves
2 tablespoons rice vinegar
1 tablespoon freshly squeezed lemon juice
1 tablespoon diced shallot
1 teaspoon brown mustard
1 teaspoon honey
salt and ground black pepper to taste

Steps:

  • Heat butter and 1 tablespoon oil in a large saute pan over medium-high heat. Pat scallops dry and add to the hot pan; sear until caramelized, 6 to 7 minutes, flipping halfway.
  • While scallops are cooking, peel, skin, and slice grapefruit. Slice fennel thinly, reserving a few fronds. Place grapefruit, fennel, fronds, and spinach in a large bowl.
  • Prepare dressing by mixing remaining 2 tablespoons olive oil, vinegar, lemon juice, shallot, mustard, honey, salt, and pepper together in a small bowl.
  • Add seared scallops to the salad and mix to combine. Drizzle dressing over top.

Top this red-grapefruit-and-fennel salad with a citrus-based dressing, such as Green Herb Sauce or Creamy Lemon Buttermilk Vinaigrette.

3 ruby-red grapefruit
1/4 teaspoon whole fennel seeds
1 teaspoon honey
1/2 teaspoon Dijon mustard
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil
1 small red onion
1 small fennel bulb
8 ounces baby spinach or watercress

Steps:

  • Using a paring knife, remove peel, pith, and outer membranes from 2 grapefruit. Slice into 1/4-inch rounds; set aside. Squeeze juice from remaining grapefruit, and set aside.
  • Place fennel seeds in a skillet over medium-high heat. Cook until golden brown and fragrant, about 3 minutes. Transfer to a spice grinder, and grind until very fine.
  • Place ground seeds in a bowl; add 1/4 cup grapefruit juice, honey, and mustard. Season with salt and pepper. Whisk to combine, slowly adding olive oil. Set dressing aside.
  • Using a mandoline or sharp knife, slice onion into thin rounds; place in a bowl. Pour remaining grapefruit juice over onions; toss.
  • Cut fennel in half lengthwise; remove core. Using mandoline, slice fennel. Drain onions; place in a large bowl. Add fennel, spinach, and grapefruit rounds. Toss with dressing.

Extra-virgin olive oil
Two 6-ounce black sea bass fillets
Kosher salt
2 to 3 cups bitter greens (1/2 head radicchio, chiffonade and 1 endive, sliced)
1/2 cup diced fennel
1/4 small red onion, thinly sliced
1/4 ruby red grapefruit, juiced
2 tablespoons pitted gaeta or kalamata olives, slivered
1 ruby red grapefruit, supremed
1/3 cup crumbled feta cheese

Steps:

  • Coat a large saute pan with olive oil and bring to a high heat. Coat the bottom of another smaller saute pan with olive oil. Sprinkle the fish with salt on both sides. When the large saute pan is screaming hot but not quite smoking, lay the fish fillets in the pan, skin-side down. Do not crowd the pan, you may have to work in batches. After you put the fish in the pan, place the other small saute pan directly on top of the fish fillets. This applies gentle pressure to the fish and forces the skin to have contact with the pan and will create crispy skin. Cook the fish for 3 to 4 minutes, and then remove the top pan. Shake the pan a little to unstick the fish. Use a fish spatula to flip the fish fillets, and cook for 2 more minutes on the other side. Remove from the pan and serve, or keep warm until the remaining fish is cooked.
  • In a large mixing bowl, dress the greens, fennel and red onions with olive oil and the grapefruit juice. Season with salt. Toss in the olive slivers and grapefruit supremes.
  • Divide the salad between 2 serving plates and sprinkle with the feta. Lean a fish fillet on each salad. Serve immediately.

1 tablespoon red wine vinegar

Steps:

  • For the salad:
  • Put the watercress, grapefruit and fennel into a large bowl and season with salt and pepper, to taste. Add the lemon juice and the olive oil and toss to combine.
  • For the brisket:
  • In a small saute pan, add the BBQ sauce and brisket, and cook over medium heat until beef is hot and cooked through. Top the brisket with 3 slices of Cheddar and toss together until combined. Season with salt and pepper, to taste.
  • Put the brisket on the toasted brioche bun and serve with the watercress salad.

1 medium garlic clove
1/2 teaspoon salt

a Japanese Benriner or other adjustable-blade slicer

Steps:

  • Heat oil with fennel seeds in a small heavy saucepan over moderate heat until seeds are fragrant and pale golden, 1 to 2 minutes. Remove from heat and let steep 2 hours.
  • While seeds are steeping, quarter fennel bulbs lengthwise and cut out and discard most of cores, leaving just enough core to keep quarters of fennel intact. Cut fennel lengthwise into paper-thin slices with slicer. Transfer to a large bowl.
  • Cut radishes crosswise into very thin slices (slightly thicker than fennel slices) with slicer and add to fennel in bowl.
  • Cut peel, including all white pith, from grapefruits with a small sharp knife. Working over a bowl, cut segments free from membranes and squeeze juice from membranes into bowl. Transfer segments to a cutting board, reserving juice in bowl, and coarsely chop, then add to fennel and radishes.

1 Yukon gold potato, diced
Kosher salt
1 clove garlic, smashed
6 head-on shrimp (21/25 count)
3 ounces thinly sliced prosciutto
Olive oil, for cooking
1 small red onion, thinly sliced
2 tablespoons red wine vinegar
1/4 bulb fennel, cored and julienned, fronds reserved for garnish
1 grapefruit, cut into supremes (segments cut free of their membranes), juice reserved
Pinch red pepper flakes
1/2 head radicchio, cored and cut into chiffonade
Handful arugula

Steps:

  • Put the potatoes in a small, heavily salted pot of cold water with the smashed garlic. Bring the water to a boil, then cook until the potatoes are tender, 4 to 5 minutes. Drain and cool on a quarter sheet tray.
  • Using kitchen shears and starting below the head, slide a blade along the back of a shrimp until you reach the tail. Peel the skin off, being careful to keep the head and tail intact. Devein if necessary and very briefly rinse. Repeat with the remaining shrimp.
  • Wrap each piece of shrimp with a slice of prosciutto and secure with a toothpick. Thinly slice the remaining prosciutto and set aside.
  • Heavily coat a pan in olive oil and place over medium-high heat. Working in batches, saute the shrimp until the prosciutto is crisp and the shrimp has turned pink, about 2 minutes per side. Remove the shrimp from the pan and let cool, then remove the toothpicks.
  • Using the same pan and additional olive oil if necessary, fry the extra prosciutto slices until crisp, about 2 minutes. Turn down the heat to medium and add the potatoes. Cook for 2 minutes, then add the red onion. Cook until the onions are soft, about 4 minutes, then add the red wine vinegar and lightly mix. Turn the heat to low and add the fennel, reserved juice from the grapefruit and the red pepper flakes. Reduce for an additional minute or two. Add the radicchio and arugula and gently toss to coat. Season to taste.
  • Plate a large spoonful of warm salad and top with 3 pieces of shrimp. Garnish with a couple grapefruit supremes and fennel fronds. Repeat to make one more serving

CHICKEN THIGHS WITH GRAPEFRUIT-FENNEL SALAD



Chicken Thighs with Grapefruit-Fennel Salad image

2 teaspoons coriander seeds
2 teaspoons fennel seeds
8 small skinless, boneless chicken thighs (about 1 1/2 pounds)
Kosher salt and freshly ground pepper
8 slices baguette
2 tablespoons plus 2 teaspoons extra-virgin olive oil
2 ruby red grapefruits
1 small bulb fennel
1 cup fresh parsley
1/4 cup crumbled low-fat feta cheese

Steps:

  • Place a baking sheet on the bottom oven rack and preheat to 475 degrees F. Coarsely grind the coriander and fennel seeds in a spice grinder or crush with a heavy skillet. Put the chicken in a large bowl and sprinkle with the spices; season with salt and pepper and toss well.
  • Drizzle the baguette slices with 1 tablespoon olive oil and season with salt and pepper. Set aside.
  • Heat a large skillet over high heat; add 2 teaspoons olive oil. Add the chicken and cook until browned on the bottom, 3 minutes. Flip and cook until browned on the other side, 1 to 2 minutes.
  • Carefully arrange the baguette slices on the hot baking sheet. Put 1 chicken thigh on each baguette slice. Roast on the bottom rack until the chicken is cooked through and the baguette is browned and crisp on the bottom, 15 to 17 minutes.
  • Meanwhile, peel the grapefruits with a paring knife; cut out the segments and transfer to a bowl. Squeeze in the juices from the membranes and add the remaining 1 tablespoon olive oil. Steps:

  • After cutting up the avocado, drizzle the slices with orange or lemon juice to halt browning.
  • On individual salad plates, divide the greens.

4 to 6 large red grapefruit, peeled
6 to 8 small heads of fennel, trimmed and thinly sliced crosswise
1/4 cup whole parsley leaves
1 tablespoon extra-virgin olive oil
Fleur de sel
Freshly ground black pepper
1 teaspoon bee pollen (optional)

Steps:

  • Using a serrated knife, cut grapefruit into 4 sections, setting tough centers aside. Cut each section in half crosswise and add to a large bowl along with sliced fennel and parsley.
  • Squeeze juice from reserved grapefruit centers over grapefruit, fennel, and parsley. Drizzle with olive oil and season with fleur de sel and pepper. Gently toss to combine.
  • Transfer salad to a serving platter and sprinkle with bee pollen, if using. Salad is best served when chilled.

2 bulbs fennel, trimmed and thinly sliced
½ red onion, thinly sliced
1 green apple, peeled and thinly sliced
1 teaspoon lemon juice
1 red grapefruit - peeled, white pith cut off, and sectioned
2 tablespoons chopped toasted walnuts, or to taste
1 tablespoon torn basil leaves, or to taste
2 teaspoons lemon juice, or to taste
2 teaspoons lime juice, or to taste
2 teaspoons grapefruit juice, or to taste
¼ cup extra-virgin olive oil, or to taste
salt and ground black pepper to taste

Steps:

  • Layer fennel, onion, and apple slices in a salad bowl and drizzle apple with 1 teaspoon lemon juice. Top salad with red grapefruit sections, toasted walnuts, and basil leaves.
  • Whisk 2 teaspoons lemon juice with lime juice, grapefruit juice, and olive oil in a small bowl; season to taste with salt and black pepper. Drizzle dressing over salad and serve.

1 1/2 tablespoons champagne vinegar
1/2 teaspoon honey
1/4 cup extra-virgin olive oil
2 heads Belgian endive, halved lengthwise, cut lengthwise into thin strips
1 head butter lettuce, leaves torn
1 cup fresh fennel bulb, thinly sliced
3 small pink grapefruits, sectioned
1 ounce parmesan cheese, shaved
1 salt and pepper

Steps:

  • Whisk vinegar and honey in a large bowl to blend. Whisk in olive oil. Add salt and pepper to taste.
  • Add endive, lettuce, and fennel to bowl. Toss to coat.
  • Top salad with grapefruit sections and parmesan. Serve.
